Our low-carb gingerbread cookies, not to be missed on a Christmas table, are a classic holiday treat everyone will love. Those gluten-free gingerbread cookies is an amazing recipe that can be shaped into whatever you desire. It is a perfect recipe for even building a Christmas gingerbread village. And entirely sugar-free, rich in protein, and ideal keto cookies for decorating with kids.  

Gingerbread Cookies are a must. They are on every Christmas table in my country, as well as the country of my husband. 

You may come from somewhere else, but in Central Europe, those cookies have been a tradition for centuries that nobody will ever break. 

Even if you do not bake anything at all during the Christmas season, those cookies, usually made with honey, are a must.

History of Honey Gingerbread Cookies. 

The history of Christmas cookies goes a long way. 

Way before all the actual sugar has been discovered.

Before sugar, the only way people used to sweeten things was honey.

At that time, only rich people could afford cookies and therefore, if anyone else did the baking, it was only during special occasions. 

Later, people started to bake those cookies throughout the year. But as more and more different variations came in, they have stayed as a must for Christmas and Easter, where all you need is to change a bit of spice and cut out shapes. 

One of the advantages of making those cookies from honey was that they stayed fresh much longer (as with sugar) and could be stored for a longer period.

Honey Replacement in Keto baking

Various liquid sweeteners are already on the market. They can be used as a replacement for honey, molasses or maple syrup. 

My favorite has been yacon syrup, which is perfect because of its deep dark color. It will beautifully darken any cookies you will be baking. 

I have even made our homemade brown sugar with it.

Another honey replacement, which I have used in my easy recipes, is maple syrup, which is my favorite and can be used anywhere, the recipe asks for honey.

Can you make gingerbread cookies with gluten-free flour?

Yes, everything is possible. And I have found out when we moved to our lifestyle and decide to go gluten free as well. Because we are living low carbs and trying to reduce the carbohydrates, the best flour replacement for all purpose flour is almond flour.

It is light in color, almost without any flavor, and it automatically makes these gluten free as well. Almond flour is used a lot in gluten free recipes.

In gf flour land, there are more gluten free baking flour blends which are also sold by Bob’s red mill, King Arthur and other brands you can purchase.

Protein Enriched Low Carb Cookies

I have added protein powder, which will keep them a bit crunchy and more like cookies in taste.

Another advantage as we all need as much protein as we can get. The only issue some might have is that those cookies, therefore, are not dairy free.

Homemade Gingerbread Spice

Ready-made spices specifically for gingerbread recipes are readily available in all the shops those days. 

Homemade is homemade, on the other hand, and I made from scratch my everything bagels spices, the same as I made here.

For my homemade gingerbread spices, I have used: 

  • Nutmeg
  • Coriander
  • Fennel
  • Anis
  • Cardamon
  • Ginger 
  • Cinnamon

Mixed at the same amount each, you would not believe what Christmas aroma will fill your house that second. 

You can add this spice mixture to any Christmas cookies or cakes you plan to bake.

Decorating Gingerbread Cookies

Initially in my country, those cookies have been decorated with walnuts or almonds, as I did this time.

My older daughter, when she was small and we were still in the sugar-land lifestyle, we used to make the icing in different colors and decorate the cookies with it afterward.

I still do it now and then as a low-carb version, but almonds are just always the fastest and safest way. And it makes them 100% perfect and beautiful without much an effort

But various options are in our lifestyle if you are looking for some decoration:

  1. Nuts – the easiest way to decorate our Christmas cookies is simply by adding nuts of your choice. I have gone with almonds this time, but walnuts are also a perfect idea. After they are baked, crunchiness and nutty smell are just irresistible. 
  2. Icing – having your kids at home, icing would be the best choice. Especially if your Christmas baking is mostly about family get together or kids activities. Mix one of the sweeteners available (I prefer Monk fruit or Allulose or a mix of both) with a few drops of heavy cream and a few drops of lemon. Lemon adds an extra sourness to the sweetness of the icing. At the same time, it will kill some sweeteners cool or bitter taste. 
  3. Gummy Bears – tiny sugar-free gummy bears added directly after the cookies are baked and still soft will make some kids happy. 
  4. Meringue Cookies – if you are baking our meringue cookies for holidays, make a few tiny pieces and use them on top of the cookies. 
  5. Marshmallowssugar-free marshmallows cut into smaller pieces are the perfect topping for any cookies. Melted or not, they will add that beautiful icing layer onto any keto cookies. 
  6. Sprinkles – I make those sugar-free sprinkles every single year around October together with vanilla extract recipe and then use the different colors for Halloween, Thanksgiving, and Christmas. And because they have a very long shelf life, Easter and Valentine’s can be decorated with various colors as well.

Easter Cookies

Our favorite cookies go onto a festivity table, not only for Christmas. If you love this recipe, you can also bake them for Easter. All you have to do is, change the cookie cutter to an egg shape, and you have it. Our recipe for gluten-free gingerbread cookies is the best recipe ever.

How do you make gluten free gingerbread cookies?

Kitchen gadgets you might need:

  • Glass mixing bowl
  • Rolling pin
  • Parchment paper
  • Cookie-cutter
  • Silicone rolling sheet
  • Egg brush
  • Baking tray

Ingredients needed:

  • Egg
  • Almond flour
  • Butter
  • Honey substitute
  • Vanilla protein
  • Baking powder
  • Sugar substitute
  • Gingerbread spices

STEP-BY-STEP INSTRUCTIONS ON HOW TO MAKE A KETO GINGERBREAD COOKIE RECIPE

First step: Prepare ingredients

Preheat your oven to 170 Celsius or 350 Fahrenheit.

Prepare all of your ingredients together with a tablespoon of gingerbread spices. 

Separate an egg and use egg white for the dough. 

Place the egg yolk into a separate bowl to be used at the end.

Second step: Mix all

In a big glass bowl, mix all the dry ingredients together. Add wet ingredients and keep mixing until all the ingredients combine and the smooth cookie dough has been formed. You can use a bowl of a stand mixer if you wish.

Remember to scrap the sides of the bowl from time to time.

Once you make the dough, use a piece of plastic wrap and place it into the refrigerator for an approximately half hour. It will be much easier to cut out the ginger cookies later on.

Third step: Roll

Place the gingerbread cookie dough onto a silicone sheet or parchment paper sprinkled a bit with protein powder or almond flour to prevent sticking. 

On top of the dough place a parchment paper and with a rolling pin and roll the dough thinly.

Fourth step: Cut

Using your favorite cookie cutter, cut the rolled dough into shapes, which you can immediately place onto the baking tray covered with parchment paper. 

Keep rolling and cutting the shapes until you have used the dough.

Fifth step: Egg 

Transfer the cookies to a prepared baking sheet. 

Whisk your leftover egg yolk with a fork or whisk. You can add a few drops of almond milk if the consistency is too thick. 

Using your brush, brush the mixed egg yolk on top of each cookie. The mixture will give cookies a flawless shiny layer.

Sixth step: Decorate

What to decorate your cookie is really up to you. Above I have mentioned a few tips and suggestions you can use. As you see in our video, I have used almonds as the simplest and still beautiful. You can use walnuts or any nuts, for that matter. You can also leave them clear.

Because of the egg yolk mixture, they would still be baked beautifully into shiny cookies. 

You can then decorate those with your icing. 

Bake for 9 minutes.

Tips For Making Gluten-Free Gingerbread cookies

  • Honey Replacement – You can use several honey replacements in keto baking. Sukrin Gold is what I have used, but Yacon syrup is a great option. It is a very thick liquid dark in color and might slightly darken your cookies. 
  • No cookie-cutter – not a problem. You can roll your dough into a log and with a sharp knife cut circles. You can also use the top cover from one of the small mason jars as a round shape cutter. 
  • Sprinkles – if you are planning to decorate your cookies with our sprinkles, I suggest using them right when the cookies comes out of the oven. Sprinkle and let them cool to room temperature. If you bake your cookies together with sprinkles, the colors will slightly fade, as you see in my pictures how the cookies look.
  • Vegan gingerbread – swap butter for vegan butter and protein for plant based protein.
  • Crispier cookies – thinner your dough will be rolled into, the more crispy your gluten free cookies will become.

FREQUENTLY ASKED QUESTIONS AND ANSWERS

Can you make soft and chewy gluten-free gingerbread men?

If you pick a cookie cutter in the form of a gingerbread man, you can easily make perfect gluten free gingerbread man cookies. And if you roll the dough slightly thicker and add a pinch of xanthan gum and baking soda, you get extra soft and chewy gingerbread cookies.

What if I do not have a cookie-cutter?

Not having a cookie-cutter is not a problem at all. It happens to us, especially if we go for a skiing holiday at Christmas and decide to bake one evening. 

You can roll the dough into a long log and, with a sharp knife, cut circle shapes, which you then place onto the baking sheet. 

You can also use one of the closing covers from the small mason jar. 

Soft drinks can be cut and shaped into the cookie cutter as well, which is what I have done for our goldfish crackers.

How to store gingerbread cookies?

Storing those best gingerbread cookies is very easy. 
Cooled cookies can go into a Christmas cookie box and store for up to a few weeks on the kitchen counter or in a refrigerator. 
Depending on the decoration you have used, ensure they are not stored for a very long time to prevent them from going bad. 
Freshly baked cookies are in the end, the best anyway. 

Can you freeze gingerbread cookies?

You do not need to make gingerbread cookies on the day of consumption.

You can freeze those perfect gingerbread cookies and that is what I do with all of my Christmas baking. I made these cookies several times, and they always go into the freezer.

I usually start baking in November and place all baked goods into the freezer. That would give me time to bake all the cookies I have planned, and I will not end up stressed days before Christmas.

The day before I would like to use them, they are taken from the freezer and left thaw naturally on the kitchen table.

    • It will for sure not have the flavor of honey, but I do not see why not. As long as the liquid sweetener is really thick like honey. Otherwise the dough might be very soft. Check for the consistency of the dough on the video.

  1. What can I substitute for vanilla protein? Not something I have on hand, and the cost for a whole container is really high especially when you only need a small amount for a recipe. Hope you can help!!

    • @Zuzana, Thank you so very much for you speedy reply. My hubby does have some plain whey protein powder. How much extra sugar substitute do you think I should add to the 1/4 cup of vanilla protein powder in your recipe? Sorry for the additional question. I am SOOOO anxious to try these. Me and my hubby LOVE Gingerbread cookies and have really missed them being on keto. Thanks in advance for a speedy reply! Hugs, Donna

      • It again depends on what liquid and normal sweetener you are using and how sweet are your taste buds. I would add half to one tablespoon of sugar sweetener extra.

    • @Zuzana, Perfect! I’ll be using Swerve Brown Sugar substitute. I’m assuming you’re using brown sugar replacement vs. white sugar right? Anyway, can’t wait to make these.
