Zucchini for kids
I have tried zucchini in all forms for my daughter, but unfortunately, she is refusing them almost completely. The only way she eats them is mixed in our low-carb burgers or made as chips. I am drying zucchini in the oven a lot as well. But with the oven, you have to watch quite a bit, so they do not burn.
Drying them in a dehydrator takes a bit longer, but you can just switch the dehydrator on and leave the house without having to worry about something getting burned. Plus, the advantage of keeping more vitamins inside is just a plus.
Every time I make those dehydrated crisps, they are gone in seconds. Mere seconds. Exactly like those I made for pictures. It took 8 hours to dehydrate them and gone in 8 seconds.
This is a perfect way to make healthy chips for our loved ones.

Dehydrator
I have to admit. A Dehydrator is one of the best inventions for the kitchen. A bit bulky in size, but once you start dehydrating, you will always find the space and will never be left without one.
Have you ever tried a dehydrator?
My first experience with food dehydrators was when we lived in Qatar, and certain vegetables were available only a few weeks a year. You had to buy a whole box (like 20 pieces) and ended up with so many vegetables that you could not consume in a few days.
I was reading a lot at that time about how best to store the vegetables and so many people have suggested investing in a Dehydrator.
I bought one, and I was dehydrating everything I could think of for the next few months. The machine was going on full blast day and night.
I fell in love with a Dehydrator and have never gone without one.
Why do you dehydrate?
The difference between drying your food in the oven and dehydrating is that the dehydrator dries everything to a maximum of 70 Celsius for a few hours.
In this way, it is claimed that vegetables, fruits, or whatever you are dehydrating keep most of their vitamins. Once dried, you can keep the veggies for a long time.
One of the great examples is this Homemade Keto Fruit Roll-Ups Recipe or Dehydrated Strawberries, Dehydrated Raspberries, where you dehydrate your berries and can keep them as a keto snack for a very long time just on a kitchen counter. And you can even make a perfect chicken jerky in there.
Cucumber chips, Dry onions or Broccoli chips are another great example, where even a vegetables can be turned into a delicious snack.
Dehydrated Zucchini Recipe
This dehydrated zucchini recipe is one of the healthiest keto foods to dehydrate. There are various vegetables that can be dried. We have tried lots of them, and they all are perfectly tasty when adding a bit of spice and sometimes, but not always, a sprinkle of oil.
They are easy low-carb snacks for when you need them. Stored in an airtight container, dehydrated zucchini chips stay crunchy for a long time.
Dehydrated Zucchini Chips Nutrition Facts
The nutrition facts for dehydrated zucchini are so great, that you will be making them all the time.
One portion of our dehydrated chips recipe, a pretty big bowl, gives you 137 calories, 12 grams of fat, 6 grams of fiber, and 3 grams of protein.
Our recipe is split into 4 portions, where one bowl consists of three-quarters of whole zucchini.
As you would use a dehydrator for making zucchini chips, there is no big choice in temperature settings. Some dehydrators might have a bit bigger spam, but most can move the temperature between 120 Fahrenheit – 150 Fahrenheit (50 Celsius -70 Celsius)
The zucchini chips made in a dehydrator take approximately 7-9 hours, depending on how thin or thick you slice them initially. I do like to cut them a bit thicker because, in my opinion, they taste a bit better as they are completely thin at the end anyway, almost like paper-thin slices.
We usually eat them as they are, just as an easy low-carb snack. But you can use various dips you would typically use for tortillas or any keto chips you are used to.
In our instance, I always use yogurt or sour cream as a base and add avocado, cheese, some spices, and a bit of garlic, depending on what’s at home and in the fridge.
But you can also choose from one of the choices below.

What to season zucchini chips with?
Choosing what to season your zucchini chips with is the easiest choice. Any spices or herbs go with them.
Whatever seeds you have at home are perfect as well. Sometimes, especially in winter, I also use our dried herb with a bit of Curcuma, paprika, garlic, or any other dry spices we have.
How to prepare dehydrated zucchini chips

- Zucchini
- EVO Oil
- Thyme
- Sesame Seeds
- Salt
- Garlic

STEP-BY-STEP INSTRUCTIONS ON HOW TO MAKE ZUCCHINI CHIPS YOU WILL LOVE EVERY TIME
Prepare Ingredients needed
Prepare all of the ingredients. To fill up the whole dehydrator, I needed 3 zucchinis. Thyme is fresh from the garden as well as garlic. If you do not have fresh herbs, you can also use dry ones.
First Step: Slice Zucchini
The best results you get are if you pick zucchinis, which are approximately the same size. Also, slicing them in the same thickness ensures, they are all done at the same time and are all the same consistency.
We are lucky to own our Meat slicer, which I use for slicing the bread mostly, but also various vegetables or meats into a perfect uniformed size. And it takes just a few seconds to slice them all evenly.
If you do have a bread or meat slicer, I always use the thickness at N1.
Second Step: Add Oil for the better crunch
Adding oil to make dehydrated zucchini, help them to be a bit more crunchy. This is really optional. I have also dried zucchinis without oil, but we still prefer to sprinkle them with oil a bit.
Especially if you are using additional spices, where they nicely soak in and are spread evenly.
Just be careful not to add too much oil, otherwise, they will never dry and will become soggy and oily even after hours of dehydrating them.
Third Step: Season
Add seasoning and spices of your choice. In our recipe, we have seasoned them with fresh thyme, dry garlic, salt, and sesame seeds. A combination of those spices together with sesame blends in perfectly for tasty zucchini chips.
Fourth Step: Mix
With your spatula (or hands if you prefer) mix olive oil and spices together fully, making sure each single zucchini slice is covered. You really might use your hand for a real perfection, since all of the zucchini slices are most of the time stuck together.
Fifth Step: Spread
Spread zucchini slices onto a dehydrator rack in a single layer. While spreading them onto a tray, make sure the oil and seasonings are spread evenly on each single zucchini slice from both sides. Follow the process until all of the trays are filled.
Sixth Step: Dehydrate
Stack all of the dehydrator trays on top of each other and close them with a lid on top. This is in the case of the dehydrator I use, which is the simplest round shape one we have. Depending on your dehydrator, follow the instructions as per your brands.
Switch the dehydrator on 70C or 150F and set the timing for 8 hours.
Make sure to switch the trays every 2 hours or so to make sure all of the zucchini chips are dehydrated evenly.
Tips and Tricks:
- Herbs – you can use any fresh herbs you have available or dry mix as well
- Zucchini – should be sliced using a meat slicer (easiest) or vegetable slicer
- Oil – you can use avocado oil as well instead of olive oil
- Seeds – I love to use sesame seeds for their taste, but you can replace them with your favorite seeds
FREQUENTLY ASKED QUESTIONS AND ANSWERS
How to make dehydrated zucchini chips in the oven?
Very similar to instructions with a dehydrator, they have to be baked in the oven at the lowest temperature. I usually use 50 Celsius (120 Fahrenheit) for 3 to 6 hours as this is the lowest my oven allows me to bake. If I use the oven, I check them regularly and might turn them halfway for both sides to be able to bake even.
They do turn a bit brownish in the oven, but that is not a problem and still tastes superb. You just need to watch for zucchinis not to burn.
Why are my zucchini chips soggy?
There are a few reasons why your zucchini chips might become soggy.
- You might have used too much oil.
- If you leave them to dehydrate too short, they might stay soggy.
- Storing them in an airtight container is very important to keep the crispiness.
But everything has a solution. I usually just place them into the oven at the lowest temperature for half an hour, and they regain the crispiness again.
How to store dehydrated zucchini chips?
Storing zucchini chips is a bit tricky. They have to be stored in an air-tight glass container, otherwise, they will lose their crispiness. You can also use Mason Jars if you have some on hand.
How long do dehydrated zucchini chips last?
Once dried thoroughly, zucchini chips last pretty long if stored properly. Again air-tight glass containers or Mason Jars are the best options. I have experienced storing them for 1 to 2 months, and they were still perfect.
Can you freeze zucchini chips?
You can freeze your zucchini chips, but remember that they will not be crispy after freezing them. But as I have already mentioned above, just place them back into the oven for a half-hour at the lowest temperature, and they will become crispy again.
What other keto dehydrated food exists?
Using a dehydrator is the best choice you can have, not only for vegetables. You can dehydrate almost all of the veggies, mushrooms, tomatoes, all the root vegetables, cucumbers, green leaves such as kale, mangold, ramp, various meats, salami, ham, bacon, all the cheeses, mixed seeds for crackers, mixed berries for leather skins, or just plain berries.

Zucchini Chips Dehydrated
Equipment
- 1 Vegetable Slicer
Ingredients
- 3 Zucchini
- 2 Tablespoons Olive oil
- 2 Tablespoons Freshly Ground Thyme
- 2 Tablespoons Sesame Seeds
- 1/2 Teaspoon Salt
- 1 Teaspoon Freshly Grated Garlic
Instructions
- Clean and dry zucchini
- Cut them into a thin slices either on a bread/meat cutting machine, or by hand at the thinnest. I have used bread machine on N1.
- Place all the zucchinis into a bowl, sprinkle with olive oil, freshly ground thyme, sesame seeds, salt and garlic.
- Gently mix all together and place it onto the dehydrator plates.
- Switch the dehydrator onto the highest ( in my case it is 70 C or 158 Fahrenheit)
- Switch the plates every 2 hours to get the drying process evenly.
- Once done store it in the airtight container or enjoy it in 2 minutes as we did ( or one person in our family did)

It really depends on how much are you planning to use it. And second, it really takes a bit of space in the kitchen because it is not a tiny equipment. I have bought a simple one for a trial and works pretty well for me, so have not really looked at the more advanced ones. But as per the research I did, Excalibur is pretty well known company. Mine costed only about 40 Euro and is a round one. Enough for an occasional dehydrating.

I have not as they gets eaten immediately. But they should be perfect in a sealed bag. I have used this option before for some dehydrated food and it worked perfectly. But I have vacuumed all of the air out.

I read the reviews to see what people think of a recipe after making it. Why does everyone think they have to leave a review saying how good something looks instead of trying it and then leaving a review on the recipe?
I can tell you from my own experience, that those zucchini chips are delicious. My daughter, who does not like zucchini at all, can not get enough of them once made. Sure worth the try.
