From the minute I made our chocolate bars and chocolate chips, I have started using them for recipes without buying expensive sugar-free bars. 

Serve them as a topping on sugar-free ice cream or popsicles for a crunchy twist. They are also a perfect addition to a cheese platter with cheese chips and a homemade cheese dip, ideal for serving your guests and family.

Types Of Chocolates To Use

You can use various chocolates to make chocolate-covered peanuts based on your preferences. The standard choices are:

  • Milk Chocolate – is a classic, smoother choice, perfect complement to the salty taste of peanuts.
  • Dark chocolate – is rich and slightly bitter but can add depth of flavor to your peanut treats.
  • White Chocolate – my favorite. White chocolate offers a sweet and smooth alternative that pairs well with peanuts.
  • Semisweet chocolate – a great option when you are looking for that sweetness and tiny bitterness. Semisweet chocolate is commonly used in baking and perfect for our chocolate-covered peanuts.
  • Bittersweet chocolate – with a higher cocoa content than semisweet, bittersweet chocolate gives you that tiny bit more intense chocolate flavor.

How To Make Chocolate Covered Peanuts

Making chocolate peanuts at home is a simple way of making a new go-to snack for you, your kids, and your family. With simple steps and ingredients, you can save more from buying in stores and know exactly what you put in.

Kitchen Gadgets Needed:

  • Instant Pot: This is used to melt the chocolates and keep the heat level for the melting process.
  • Wooden Stick: Stir the chocolate and coconut oil while they melt together.
  • Tweezers: Perfect for picking single peanut pieces from a melted chocolate bowl.
  • Glass Bowl: A large heatproof bowl is great for melting chocolate.

Ingredients Needed:

  • Peanuts: Opt for unsalted and dry plain peanuts for that pure nutty flavor. 
  • Chocolate: Choose high-quality dark chocolate with at least 70% cocoa content. You can also make your own chocolate bars, which perfectly fit our recipe and lifestyle.
  • Coconut Oil: A small amount of coconut oil adds a silky texture to the chocolate coating.

STEP-BY-STEP INSTRUCTIONS TO MAKE THIS RECIPE

First Step: Prepare All The Ingredients

First things first, prepare all your ingredients.

Pick any peanuts of your choice. I am using unsalted recipes for this recipe, but you can also use salted or roasted peanuts.

Ensure the peanuts are dry and have no moisture before covering them with melted dark chocolate.

For the chocolate, use a dark chocolate bar and chop it into small pieces to melt easily. You can also use dark chocolate chips or white chocolate chips. Choose whatever chocolate you want to use.

Second Step: Melt the Chocolate

Using the instant pot switched on sautè, add water in and let it boil. Add your chocolate and melt the dark chocolate pieces in a heatproof bowl. Add the coconut oil and stir until thoroughly combined and until the chocolate is melted and smooth.

Third Step: Coat the Peanuts

Pour the peanuts into the chocolate and mix with a spoon or baking spatula to coat them evenly. Another way of coating them is to pour the chocolate on top of them, but this can be a bit messy.

Fourth Step: Chill

Prepare a baking sheet with wax or parchment paper and transfer the chocolate peanuts one by one to cool. You can use a spoon or a long tweezer to transfer each peanut, making sure they do not stick to each other.

Let the chocolate-covered peanuts chill in the refrigerator or freezer to enjoy later. Any leftovers, make sugar free chocolate bark.

TIPS AND TRICKS:

  • Melting the chocolate – you can use other melting methods like a double boiler, which most people do. Microwave is also easy, but you will need a microwave-safe bowl for it.
  • Choosing nuts – you can select what peanuts you want for this recipe. Consider lightly salted peanuts, almonds, or cashews for a salty, nutty flavor combo.
  • Sea salt – optionally, you can sprinkle a little sea salt on your chocolate-covered peanuts for a contrast in sweetness.
  • Chocolate – use semi-sweet chocolate chips, milk chocolate chips, or anything within your preference. You can use whatever is available in your fridge. Even the extra chocolate chips from your cookies will do.

How To Make Peanut Clusters Recipe?

Making chocolate peanut clusters while preparing this recipe is a great idea. Once you feel you have picked enough single-covered peanuts, take a spoon and pick the leftovers from the bowl. Peanut clusters are formed with groups of 4 to 5 nuts covered in chocolate, which lets you finish all the rest of the nuts. 

Let them rest on a parchment-lined baking sheet and chill. These treats are perfect for party snacks or your go-to snack or dessert.

What To Serve With Chocolate Peanuts?

For a crunchy treat, serve it at a party with other homemade treats like butter cookies and brownies. You can also top your instant pot yogurt with these chocolate peanuts for an instant parfait at home.

Make a trail mix with them together with dried cranberries, nuts, seeds and dehydrated blueberries. 

How Do I Store Peanuts In Melted Chocolate?

Keep your chocolate-covered peanuts fresh by storing them in your pantry in a cool, dry place.

You can also place them in an airtight container or sealable bag to prevent moisture and air from affecting their texture. Another option is to store them in the refrigerator, especially in warmer climates.

Can I Freeze Chocolate Peanuts?

You can freeze chocolate-covered peanuts by placing them in an airtight container or a resealable plastic bag to protect them from freezer burn and odors. 
When you are ready to eat them, let them thaw at room temperature for a few minutes before eating.
