After so many of you have written to me about the Keto Dough mixture used in our Keto Tater Tots or Croquettes and asking so much about the fries, I had to make this post. I also made this keto french fried onions since I love onions so much.

Heavenly Keto Dough
Have you heard of Fathead dough? I am sure you have.
And have you heard of Heavenly Dough? Not yet? Well read further
A mixture of one of the Nut flour together with Xanthan and hot water gets transformed into a dough very similar to the mashed potatoes.
That is the exact taste you get from anything made with Heavenly Dough.
Almond and Coconut Flour together
As I have to always experiment a bit further, I have mixed both Almond and Coconut Flour and made the best mixture my family and I love.
With this dough, I am already in the process of preparation of various recipes for all of you. It started with our Croquettes and now Fries.

In her video, she is explaining how she has discovered this mixture by accident and came up with the idea of making Heavenly Keto French Fries.
How many Carbs are in the French Fries?
An ordinary french fries made from real potatoes normally contain as many carbs, you might need for the whole week in our lifestyle.
But not Heavenly Fries. Crunchy or Crispy Fries you are going to make contains only 3 carbs per serving (10 Fries) together with 4 g of Fiber. Isn’t that magical and fabulous? And the taste is the same as you would eat ordinary Fries.
Cooking options for Heavenly Fries.
Even though our preferred option is Deep Frying to get closest to the real crispiness of fries, you can choose from all 3.
Deep Fry – best on the middle heat slowly turning the fries
Oven – spray the fries with a bit of oil and bake at 200 Celsius or 400F until golden brown
Air Fryer – Spraying fries with a bit of oil Airfry them for approximately 6 minutes

STEP BY STEP INSTRUCTIONS ON THE CRUNCHIEST KETO FRIES
First Step: Prepare Ingredients
First of all, prepare all of your ingredients for easy maneuver.
Make sure you have boiling water on the side as well.
Second Step: Mix Dry
In a glass bowl or a mixing jar, place all of the dry ingredients in and mix until fully combined.
Make sure no lumps are formed.
Third Step: Add Water
Once all of the ingredients are fully combined and lumps are taken out add the hot or boiling water.
Fourth step: Mix
Using your spatula, mix all of the dry ingredients with the boiling water until a smooth dough has been formed.
Fifth Step: Roll Dough
Once everything is combined, place the dough onto a silicone sheet or parchment paper and work it out further.
Using a rolling pin, roll the dough into a rectangular shape, approximately a quarter of an inch thick.
If you have a silicone spatula you shouldn’t have a problem with stickiness but if you feel the dough still sticky, you can either place it for 5 to 10 minutes in the refrigerator or use parchment paper on top of the dough before rolling.
Sixth Step: Cut
Once you have a rectangular shape with approximately a quarter of an inch thick using either a knife or cake scraper cut the dough into half and then a really thin slice like french fries.
It is better to cut it thinner as during the Frying process the fries might increase a tiny bit in size.
Seventh Step: Fry
Once all of the dough is cut into french fries, placed them one by one into the preheated pan with oil.
Fry at a low to middle heat slowly turning the fries onto all sides.
Eight Step: Paper towel
Once all of the keto french fries are brown and crispy, placed them one by one onto a bowl covered with a paper towel.
Paper towel will take the remaining oil from Fries.
Tips and Tricks
Rest the dough – Let the dough rest a bit before rolling if you do feel it is very sticky
Cut Thin – Cut the french fries thin as during the frying process they will still increase in size a tiny bit.
Fry at a low to middle temperature – It is best to fry the french fries at a low to medium-high temperature, as this will make sure they have been fried equally on all sides and do not burn immediately.
Cooking options:
Deep Fry
Oven – 200C or 400F
Air Fryer – 6 minutes

How do you store Heavenly Fries?
Even though those keto french fries are best to be eaten directly as they are fresh and the crispiest, you can still store them for later on.
Place them into an airtight container preferably glass and store them in the refrigerator for up to 2 to 3 days.
Can you freeze Keto french Fries?
You can certainly freeze those keto french fries without any issues.
The best is to precut the dough. Place the row fries into the Ziploc bag and directly into the freezer.
Can you make those fries ahead?
You can certainly make those fries well ahead of time.
It is much better to place them onto a cutting board and once you’re ready to serve just place it into the frying oil.

We made these and had leftover fried fries. We have the leftovers a second life by popping them in the air fryer and after they warmed and crisped up again, shook them in a paper bag with sweetener and cinnamon. OMG. Churros. But keto!

Made one batch, divided and cooked them 3 ways: airfryer, oven and oil. Definitely will make again using the oil technique. With the airfryer and oven methods the coconut flavor comes thru more than I would like; when fried in oil the taste and texture were by far the best and closest the a real french fry. I saw the recipe and thought 6 teaspoons of xanthan gum?? I HATE xanthan gum. It’s slimy and weird but I was desperate. Holy cow are these good. After frying,I can’t taste the xanthan gum OR the coconut flour (which I am not fond of either). GREAT JOB #lowcarb_nocarb. You have a clear winner!

Dear Becky, I hardly ever fry, so for me, it is a yes, every time I use a new oil. But as I remember when I was a kid, people just got the oil to run through thieve or cheesecloth and used it again.
Amazing! Great texture and was so fun to make, added a smidge to much water but just took a lil extra time to cut them, totally worth it. The way I Seasoned it Made it taste like amazing Breading, kind of felt like chicken Tenders <3 so excited to do a Dessert Version ?
I noticed someone said it was too much water in the comments. I tried this recipe tonight and I too noticed too much water. When I reread the list of ingredients I saw right away that 1 cup of water for North America is 250ml not 210ml as stated, so we should have put less than 1 cup. This is not the first time I see this. I had the same problems with Ketoserts’ recipes on YT.
Aside from that, I did make 36 pieces and my non-Keto husband ate 12 of them. I only had 6 because I wasn’t hungry after my hamburger and cheese with broccoli and cauliflower. Really tastes like potatoes. Cooks a batch in less than 3 minutes on the stove in a skillet with oil.

With regards to cups, I know there are different measurements in every part of the word. I personally measure everything in grams as those are the precise wherever you are. I do try to state grams next to almost everything.
I was interested in learning about this recipe but was so sad to learn it has xanthan gum in it. I have a sensitivity to xanthan gum that upsets my digestive system. Is there anything I can substitute for it or leave it out altogether? Or am I just doomed to not enjoy keto fries?!

Yes, you are right Linda, 10 pieces are one serving. But this is very approximate as everyone rolls the dough a bit differently, cuts them thinner or thicker as well as the length of each fries. So take that as approximate.
I just made them in the oven… I don’t think it is an option. Very dry and dull… The dough was very sticky and impossible to roll. Pity it didn’t work for us… Great to see for many it did work!
These were soooooo good! I’ve made these with only almond flour in the air fryer before and found them a little dry, but this recipe deep fried is just wonderful! A bit sticky and fiddly to get the cut dough into the pan but worth the effort!

I have not tried gelatine, but i guess it will be more slimy. But worth trying. You can order Xanthan Gum online and it will last you for a very long time as you need tiny amount for any recipe.

I have tried another recipe with coconut flour only and it was very bland so I was skeptical going in. I brushed them lightly with almond oil and used the air fryer to cook them at 400 degrees. I checked them every 3-4 minutes, turning them each time. They do puff up as the recipe states. I cut the recipe in half to 2 servings. They are very filling and I am planning to heat the leftovers in the air fryer tomorrow. I made a fry sauce from 14 g mayo (homemade) and 15 g of Heinz No Sugar Added ketchup. Yum! Thank for sharing.

My concern is the measurements, cups, Tbsp, tsp.
If the water measurement is skewed because of a cup size so are the flour amounts I think.
I get tired of making things that become a freaking disaster.
I believe in this one, in fact would like to double it.
I guess to make this work I need to measure by scale – like I want to do that!!
I love using scale, because there is no discrepancy in various cup measurements. You are going to love them big time. The taste like a real thing. You will even feel potatoes in.
Really like these fries. I froze half and even those turned out great. I am going to double the recipe so I have lots in the freezer when I want some.

When cooking from freezer do you need to defrost before cooking or can they be fried directly still frozen? THAT YOU
Since normally it is best to cut them really thin, you can fry them directly like you would fry normal store bought fries
We made these and had leftover fried fries. We have the leftovers a second life by popping them in the air fryer and after they warmed and crisped up again, shook them in a paper bag with sweetener and cinnamon. OMG. Churros. But keto!
Next time, I’d add a pat of butter and a pinch of salt!

You can use only almond flour. In that case double the amount of coconut flour.

No need to freeze at all. Just let is sit for few minutes before cutting. This will reduce a bit of stickiness.

Made one batch, divided and cooked them 3 ways: airfryer, oven and oil. Definitely will make again using the oil technique. With the airfryer and oven methods the coconut flavor comes thru more than I would like; when fried in oil the taste and texture were by far the best and closest the a real french fry. Best oil to use?
Use oil, which you normally use for frying. I like Avocado oil.
I saw the recipe and thought 6 teaspoons of xanthan gum?? I HATE xanthan gum. It’s slimy and weird but I was desperate. Holy cow are these good. After frying,I can’t taste the xanthan gum OR the coconut flour (which I am not fond of either). GREAT JOB #lowcarb_nocarb. You have a clear winner!

Dear Becky, I hardly ever fry, so for me, it is a yes, every time I use a new oil. But as I remember when I was a kid, people just got the oil to run through thieve or cheesecloth and used it again.
Amazing! Great texture and was so fun to make, added a smidge to much water but just took a lil extra time to cut them, totally worth it. The way I Seasoned it Made it taste like amazing Breading, kind of felt like chicken Tenders <3 so excited to do a Dessert Version ?

I noticed someone said it was too much water in the comments. I tried this recipe tonight and I too noticed too much water. When I reread the list of ingredients I saw right away that 1 cup of water for North America is 250ml not 210ml as stated, so we should have put less than 1 cup. This is not the first time I see this. I had the same problems with Ketoserts’ recipes on YT.
Aside from that, I did make 36 pieces and my non-Keto husband ate 12 of them. I only had 6 because I wasn’t hungry after my hamburger and cheese with broccoli and cauliflower. Really tastes like potatoes. Cooks a batch in less than 3 minutes on the stove in a skillet with oil.

With regards to cups, I know there are different measurements in every part of the word. I personally measure everything in grams as those are the precise wherever you are. I do try to state grams next to almost everything.
I was interested in learning about this recipe but was so sad to learn it has xanthan gum in it. I have a sensitivity to xanthan gum that upsets my digestive system. Is there anything I can substitute for it or leave it out altogether? Or am I just doomed to not enjoy keto fries?!

I would try Guar Gum, which has a similar consistency and does the same as Xanthan Gum in cooking.

Yes, you are right Linda, 10 pieces are one serving. But this is very approximate as everyone rolls the dough a bit differently, cuts them thinner or thicker as well as the length of each fries. So take that as approximate.
I just made them in the oven… I don’t think it is an option. Very dry and dull… The dough was very sticky and impossible to roll. Pity it didn’t work for us… Great to see for many it did work!
I have to admit, they are not very good from the oven. You are so right about dryness. Try to fry them once and you will be hooked
These were soooooo good! I’ve made these with only almond flour in the air fryer before and found them a little dry, but this recipe deep fried is just wonderful! A bit sticky and fiddly to get the cut dough into the pan but worth the effort!
Yeah, That’s what I have found as well. Mixing both almond and coconut flour makes the dough much tastier as if you use just one flour. Happy you like them, Michelle.

I have not tried gelatine, but i guess it will be more slimy. But worth trying. You can order Xanthan Gum online and it will last you for a very long time as you need tiny amount for any recipe.

Tamara, but there is no gelatine in the recipe. You can not replace xanthan gum with gelatine. It is completely different.
