Casseroles are easy to make as all you have to do is add some layers of protein, low-carb vegetables, lots of cheese, and some kind of sauce. It is baked in the oven, and it always looks extra delicious and super cheesy.

I guess I never knew exactly what to do with them and how to prepare them properly.

What are Brussel Sprouts?

Brussels Sprout is one of the few vegetables that grow even when your garden is covered with snow. 

Those tiny buds of mini cabbages grow on tall stalks, and you can get approximately 60 to 80 spouts from one single branch. 

They have a pretty long shelf life in the refrigerator and are very popular, especially in autumn and winter.

To clean Brussel Sprouts is super easy. You have to cut the end of the bud and peel one layer of the leaves. Wash them under warm water, and you are ready to prepare.

STEP BY STEP INSTRUCTIONS FOR BEST CHEESY KETO BRUSSEL SPROUTS AU GRATIN 

First Step: Prepare ingredients for Brussel Sprouts Casserole.

Prepare all of your ingredients for the keto casserole.

At the same time, preheat your oven to 200 Celsius or 390 Fahrenheit.

Make sure you buy a block of hard cheese and grated at home as most of the store-bought grated cheese contains additional starches with lots of carbohydrates.

Second Step: Clean and Blanch your Brussel Sprouts

Clean your brussels sprouts by cutting the end of the buts and peeling the outer layer of the leaves. Wash and place into the boiling pot of water for approximately five minutes.

This blanching will soften them slightly and retain the beautiful green color while baking. 

After five minutes, quickly place them into the ice-cold water for the color to remain. For more precise steps, you can check our video attached.

Third Step: Whisk eggs and add salt and pepper

In the meantime, add eggs into a mixing bowl and whisk them properly. 

At the same time, add salt and pepper.

Fourth Step: Add Sour Cream and whisk

Once your eggs are whisked, continue adding sour cream and mix thoroughly.

Fifth Step: Add Grated Cheese and whisk

As the last ingredient, add your grated cheese and ensure the whole mixture is smooth.

Sixth Step: Spread Brussel Sprouts onto the Casserole dish

Depending on the size of your casserole dish, spread the brussels sprouts evenly around.

Seventh Step: Pour mixture and bake.

Gently pour the mixture onto the brussels sprouts covering them all.

Place into the oven and bake for approximately 20 minutes.

Eighth Step: Add extra Grated Cheese and bake

After your Keto casserole has been baked, take it out of the oven. 

Spread the rest of the grated cheese on top.

Place again into the oven and bake for 10 minutes until the cheese becomes golden brown.

Place them into the glass container, best pre-portioned for easier meal preparation.

Take your portion out of the freezer the night before and let it thaw naturally in the fridge.

  • Brussels sprout circa 30 pieces
  • 3 Eggs
  • 1 Cup Sour cream
  • 200 grams Grated Cheese
  • Salt

  1. Brussels Sprouts seem to be one of those things you either love or hate. I don’t like them much compared to other veggies. I do like this recipe though. Also I don’t like to cook much, but bis is really easy to make.

    I also used diced bacon bits for some more meat. And used the sauce and cheese with other frozen veggies. Heat up the veggies for 2-4 min. in the micro (or pot on a stove, if you prefer). Don’t cook the veggies too hot, just heat them up enough so they’re not stone hard frozen anymore. They’ll be cooking more in the oven later anyway. While waiting for the veggies in the micro I prepared the sauce and put it all together like that. Yesterday I wanted even more than diced bacon bits and had to use up some ground beef. So I heated that up in a pan, heated up some mixed frozen veggies in the micro, put the veggies in the baking form, added the well cooked ground beef (use a spoon or something, if you want to mix up the veggies and beef more or don’t, if you want layers).

    If I’m lazy and want some veggies, this is my go to now. As suggested above, variations of veggies are possible and basically endless. Thanks a lot for posting this!

    we love Brussel sprouts and we can have up to 50g carbs a day. 🙂

  4. I used heavy cream instead of sour cream for this recipe. I loved the creamy texture and the added garlic powder gave it a nice kick. The Brussels sprouts were also tender and the cheesy topping was just perfect. Delicious recipe!

  6. Love this recipe. I had never had Brussel spouts like this in a casserole, and I loved it. It’s similar to broccoli casserole but better with the Brussel sprouts.
