Transforming to a Low Carb lifestyle was not always easy if you were like me. There were dishes that I have adored and could not imagine living without. One of them was sushi.

Is Sushi Keto?

The sushi you are used to in restaurants is not keto at all. Anything filled with rice, as we know, contains lots of carbohydrates and is out of the list for us.
The good news is that making your sushi at home using cauliflower rice and following the steps below will get you perfect sushi that is fully Keto and tastes identical to the regular one. 

How many carbs are in Low Carb Sushi?

Considering our Low Carb Sushi recipe, you get a perfect 2 grams of carbs per sushi. 
With 2 grams of fiber per piece, your net carbohydrates come to a beautiful number 0, which we all love.

Keto Rice

The first and essential ingredient in making sushi is rice. And since rice is out of the question in our lifestyle, we have to find some alternatives. 

There is, of course, a way to make sushi without rice or its replacement, and that is our Naruto Rolls Recipe. But if you want to have sushi, especially maki rolls, rice or its equivalent needs to be there.

Types of keto sushi rice

We have 2 types of low-carb sushi rice you can use

Shirataki Rice

Shirataki rice is one of the options in making your sushi ketogenic, but to me, it does have a different taste and is not something I was satisfied with. 

Cauliflower Rice

Bingo. Making cauliflower rice with our steps is the easiest thing you can imagine. And once I made it and tried making sushi with it, I felt that I had hit the nail in the right spot. You will not see or taste the difference at all.

How to make Keto rice?

In this post, we will make a Keto-Friendly Sushi Rolls Recipe with Cauliflower rice. I have chosen Cauliflower because it is closest looking to the actual rice. And as cauliflower is excellent for our Low Carb lifestyle, it is a perfect keto-friendly sushi option you will not see or taste the difference with.

How to make Cauliflower rice?

There are various options on how you can make Cauliflower rice. You can manually cut cauliflower into small pieces or place it into the mixer and get it mixed. 

Best way to cut cauliflower into rice

Here comes the best tip ever for making perfect cauliflower rice. 

As you see in the video, all you have to do is place your chunks of cauliflower into the blender, fill it up with water, and blend. That is it. 

This unique process, together with water, will ensure your cauliflower is cut into the perfectly rice-looking rice pieces you have ever seen. And it takes you exactly one minute of your time.

Cauliflower Sushi Rice

How to make cauliflower rice for sushi?

Once you get your cauliflower rice, boil it for a few minutes, drain it thoroughly, and have your rice ready.

I use a muslin cloth to drain the rice properly because if it is too moist, your Keto Sushi will not hold properly. I always drain it as much as possible until I have a little ball, almost dry. It still contains a bit of liquid, which is perfect for rolling it further. In that way, you do not have to moist anything else, and once you cut your sushi rolls, you will not see or taste the difference.

Do you add anything to the Cauliflower rice to make it taste like sushi?

The first time I made this Keto Friendly Sushi Rolls Recipe, I decided not to add anything and see the results. 

I have found out that you do not need to add any vinegar or sugar alternative as they do in original recipes. Because sushi rolls are always with the addition of some veggies or raw fish, you get enough flavor from those, and at the end, you soak it in the soya sauce together with wasabi, which is more than enough.

To be proper and make it as original as possible, I have added a bit of vinegar and stevia, but only to the boiling water while cooking cauliflower. That way, you get that little tiny smear of the taste, still perfect enough for sushi rice.

How To Make Keto Sushi

STEP-BY-STEP INSTRUCTIONS FOR MAKING THE BEST KETO SUSHI ROLLS

First Step: Prepare all ingredients

Get all of your ingredients ready. Make sure salmon is fresh and great for sushi making. Stevia can be replaced with any sweetener

Second Step: Blend Cauliflower

Break cauliflower into smaller pieces. Add it into the Blender and add cold water, just to cover the cauliflower. Be careful not to fill it with the water entirely, otherwise, all will spill while mixing. Switch on the Blender and wait until cauliflower is cut into the desired tiny rice-looking pieces.

Third Step: Cook Cauli Rice

Add cauliflower with water into the pot and let it cook for 5 minutes. Add the vinegar and stevia. Once cooked, drain the cauliflower rice through the sieve. Run through with cold water so you are able to handle the heat afterward.

Fourth Step: Dry Cauli Rice

Once all of the water is drained, transfer the cauliflower onto the muslin cloth and squeeze it until all of the water is out. Please check the video for a better understanding. 

Place the cauliflower onto a bowl and prepare your Nori sheets.

Fifth Step: Layer your Sushi

Once your Nori sheet is prepared, add the cauli rice as you would in traditional sushi making. Add your desired veggies and fish at the end of the sheets. We made it with salmon and avocado.

Water the end of the nori a bit so it will hold once rolled.

Sixth Step: Roll and cut

Roll the sushi and place it aside. Follow the same instruction with the second roll.

Once done, cut with a sharp knife and set it for serving.

Tips and Tricks:

  • Sushi rice – needs to be cold to prevent the nori sheets from breaking
  • Muslin Cloth – use to drain your rice into almost dry
  • Toppings – pick your favorite toppings of protein and veggies from the list above

What to serve with Low Carb Sushi?

Can you make cauliflower rice in a Magic Bullet or Nutri Bullet?

Yes, you can also make cauli rice in a NutriBullet the same way we make it in the blender. The only issue might be that it will take a bit of time if you plan to cut the whole Cauliflower head. Because for Cauliflower to be able to be cut into those rice-looking pieces, you can only add about half the cup of cauliflower and fill it up with water so that the process can be made.

Can cauliflower rice be frozen?

Yes, it can freeze cauliflower rice, and I have done it on several occasions. I usually freeze the cauliflower rice uncooked, so if I need it, I just take it from the freezer and use it however I want.

Ensure that once taken out of the freezer, let it unfreeze properly and drain all the water. But it depends on what you plan to do with it.

How do you store Keto Sushi?

If you are using raw fish, I suggest consuming the sushi immediately after it is made. 

The rest of the sushi or maki rolls could be stored in your fridge for 2-3 days. 

Can you freeze Low Carb Sushi?

You can certainly freeze your sushi rolls, but I suggest freezing only maki rolls made with veggies or cooked meat.

Ingredients

  • 2 Cup of cauliflower
  • 2 pieces of Nori Sheets
  • 1 Tablespoon of Vinegar
  • 1 Stevia tablet
  • 25 grams (4 slices) Salmon
  • 0,5 Medium avocado

Instructions

  3. I searched and searched pintrest for a cauliflower sushi ant it just seemed the cauliflower would crumble. Then I found your recipe and I gave it a try. It seemed simpler the way you handled the cauliflower. I loved it! I only had soy wrappers the first time. Tonight I have the nori. I’m looking forward to it.   4. I was so excited at first about low carb sushi! Then deflated. I should have known it would be cauliflower. There are those of us (I am not alone) who simply cannot tolerate the taste of cauliflower. I am wondering if anyone has ideas for an alternative?

    • @Zuzana, I gotta agree with you. Made this tonight and it was amazing. Couldn’t taste the cauliflower at all. Gave my sushi loving 16 year old a piece and she LOVED it, didn’t even know it didn’t have rice until I told her and said she preferred it to normal sushi.
