How do you make Brown Sugar if you do not have any?
This post is precisely about learning how to make brown sugar at home with only two ingredients in a few minutes. All you need is your preferred ingredient and an additional thick, dark syrup with no carbohydrates. And that is not blackstrap molasses.
What is a Keto Brown Sugar Substitute?
Here comes the secret. And that is Yacon Syrup.
Yacon Syrup was one of the first liquid sweeteners I had tried and used when our daughter was diagnosed with Diabetes 13 years ago.
There were almost no other keto alternatives at that time, and my main concern was an ingredient that did not raise blood sugar.
What is Yacon Syrup?
Yacon Syrup is a natural sweetener extracted from the vegetable root Yacon, similar to potatoes.
Countries like Brazil, Peru, or Bolivia have used this excellent sugar replacement for years with low calories and low carbohydrates.
Yacon Syrup is also high in potassium and antioxidants and therefore is an excellent addition to our Low Carb or Keto Lifestyle.
Even though the root contains free fructose, its syrup does not raise blood sugar.
It has a similar taste, looks, and thickness to molasses but fewer carbohydrates.
One Tablespoon of Yacon Syrup contains only 8 grams of carbohydrates and 34 calories compared to molasses, containing 15 grams of carbohydrates and 58 calories.
Using a Yacon Syrup, your nutritional values are cut to about half, making a difference for most of us.
Simply use your preferred sweeteners or sugar substitutes to make your brown sugar substitute. Almost any crystalised sweetener you have at home will work with this recipe.
The most favorite of mine is Allulose, Monk Fruit, Erythritol, and in some cases, Xylitol.
In our Homemade Keto Brown Sugar Recipe, there are no Carbohydrates at all.
Your carbohydrate intake comes to a complete 0 using a tablespoon or two with our brown sugar blend.
Because sweeteners you will use usually contain only sugar alcohol, yacon syrup containing the minimum amount of carbohydrates, it is the best choice to pick whether you have diabetes or are following a Keto diet for specific other reasons.
How to make Keto Brown Sugar darker?
I used 1 Tablespoon of Yacon Syrup in our Recipe, making the mixture light brown sugar.
That is what I was going for, but if you would like to have darker Brown sugar for various reasons, just add another tablespoon of a Yacon Syrup.

STEP BY STEP INSTRUCTIONS ON HOW TO MAKE HOMEMADE SUGAR FREE BROWN SUGAR
First Step: Ingredients for Brown Sugar Substitute
Prepare two Ingredients for making Homemade Sugar Free Brown Sugar.
It is best to get a crystalized version for a sweetener as this will mimic the traditional brown sugar at the end of the process.
Some Yacon syrup might come a bit more like a honey texture and might need more than one tablespoon to brown your copy cut brown substitute.
Second Step: White Sugar Substitute
Place a cup of your crystallized sweetener into a mixing bowl.
As already mentioned, you can use almost any crystallized version of a sugar substitute you have at home. Be it Allulose, which is my preferred one, or Monk Fruit, Erythritol, or Xylitol.
If using Xylitol, bear in mind that it is poisonous to dogs, just in case you have some pets around the house.
Third Step: Yacon Syrup
Add one tablespoon of Yacon Syrup on top of the Crystalized sweetener.
Do not do it another way around, as the Yacon syrup is very thick and sticky and might be challenging to get out of the sides of the bowl.
Fourth Step: Mix
Using your spatula, start incorporating your syrup into the sugar substitute. Keep mixing and combining for a while.
As yacon syrup is very thick, it takes a while to cover every sugar crystal.
You might use your washed hands to fasten the process.
Fifth Step: Finish when all spread
Keep mixing until you see every single crystal being covered and brown.
If you are still not satisfied with the color and would like your brown sugar to be darker, add one extra tablespoon of yacon syrup and repeat the process.
Tips and Tricks:
- Steps – Pour first your crystalised sweetener into a mixing bowl, followed by Yacon syrup.
- Darker – if you want your healthy Brown sugar substitute darker, add an extra tablespoon of yacon syrup.
- Yacon Syrup Alternative – If you do not have yacon syrup, you can use blackstrap molasses, which has the same consistency, taste, and look, but bear in mind to double the nutritional values as molasses has got more carbohydrates and calories.
- Xylitol Sweetener – If using Xylitol, remember that it is poisonous to dogs, just in case you have some pets around the house.

How can you store homemade Brown Sugar Substitute?
You can store homemade substitutes for brown sugar, the same as regular brown sugar. Use either a Mason Jar or any glass container with the lid.
Store in your Kitchen Pantry for 2-3 months.
Can you freeze Keto Brown Sugar?
You can certainly freeze your Keto Brown sugar as you freeze regular brown sugar. The shelf life will be much longer, and all you need is to take the brown sugar from the freezer the night before needed.

Dear Michelle, I am sorry I might not be in a good help here as I live in Europe and we have for sure completely different Brands in the country. As long as the Syrup is thick, dark and without any additional ingredients, it should be ok.

I am SO delighted to see this recipe! Especially as we’re coming up into cooler weather (here in the northeastern USA), I start thinking in terms of things like gingerbread and pumpkin desserts, brown-sugar desserts.
