Easy keto soup recipes

I have a few great choices for you to warm up with a delicious, comforting bowl of soup.

The most beautiful pumpkin soup served inside a baked pumpkin bowl is always a winner whenever guests arrive.

Coming in line with noodles, our chicken noodle soup or egg drop soup is always prepared whenever someone gets sick. It helps dearly together with a bone broth, and I make sure a few jars are in our freezer at all time.

For special occasions, I have Taco soup and tomato soup recipes. For holidays, our Christmas sauerkraut soup.

I needed extra protein and my childhood memories, whey root vegetable soup is what I regularly make.

And if that is not enough, I have prepared a collection of over 35 various soup recipes allied with our lifestyle.

What makes this recipe so good?

Perfectly tasty keto ramen chicken noodles filled with flavors all over. Add whatever you want and make it colorful. It will always be different from last time. Loved by all, our low carb ramen recipe is a must on a regular basis.

Out of all the delicious keto ramen recipes, this soup tastes exactly like ramen bowl in the restaurant and is much better than instant noodles.

What is ramen?

Traditional Ramen is a whole Japanese meal in one large bowl. Consisting of instant ramen noodles, soup, various Japanese veggies, sprouts, and some protein. Topped with Broth and spiced up with soy sauce, coconut aminos, or fish sauce, it gives you a look and a taste of Asia. 

It has become a trendy type of dish in the last century. 

Especially popular are pre-packed instant noodles. Every shop sells it, and it is pretty famous with our young generation, who do not have time to cook or are just not bothered. All you have to do is boil the water and add spices and dry noodles. It also costs only a few pennies and can be taken to work or eaten anywhere.

Is ramen keto?

Ramen, in general, is not a part of the keto diet. The first and the biggest carb eater are noodles. The second issue is all the sauces or powdered ingredients added for a flavor.

On the positive side, as we are here eating keto, you can easily make a perfect keto ramen noodle soup using our recipe with various noodles suggestions at only 4 grams of net carbs.

How do you make keto ramen soup?

Super easy is to make a delicious ramen soup that is a fit for our lifestyle. It is even easier if you already have your broth in the freezer.

With a few steps and some healthy ingredients, your whole meal is ready in minutes.

Ramen noodle options

As you see in my recipe, I have used tofu shirataki noodles as a keto noodles option. When initially preparing this recipe for you, shirataki noodles were the only keto noodles I have known.

But time passed, and I became a genie making various pasta variations.

You can pick our original tofu shirataki, or you can alternate with one of our homemade recipes:

They all are a great addition to a bowl of ramen soup.

Best Low carb ramen variations

Apart from our homemade noodles, you can use vegetables as a replacement. Great choices are:

  • Zoodles
  • Kelp noodles
  • Spaghetti squash
  • Palmini noodles

What are Shirataki noodles?

Shirataki noodles are a perfect replacement for a keto or low carb lifestyle instead of regular noodles. Made from konjac flour, they are sometimes called konjac noodles or also known as miracle noodles.

As Konjac roots do not contain carbs, you can add any amount. They have a complete zero net carb per serving.

Tofu Shirataki

For a rice noodles replacement, we use normal Shirataki, but for noodles options, I have found Tofu Shirataki, which is a bit tastier and more to our liking.

Tofu noodles are not carb free, but contain very minimal carbs per packet from tofu and are low in calories, but since we are not doing this lifestyle because of weight loss, it does not matter. 

Tofu Shirataki is much softer compared to pure shirataki or Miracle noodles, as some calls them. Also, the color is not entirely see-through but is a bit on the whiter side. Or, almost the same as the authentic pasta-looking ones.

How do you cook shirataki noodles?

Shirataki noodles are sold in a water-packed container, so you must rinse them properly before use. The liquid they are in has a strong fishy flavor, and if not rinsed properly, you will never touch them again.

I usually wash them under hot water and add them to the desired dish. Let it cook a bit with the dish, where it will soak up all the perfect flavor from a dish and will become irresistible.

What else goes into the keto ramen recipe?

Our recipe apart of broth is a combination of chicken, mushrooms, soft boiled eggs, Bok choy, avocado, leek, carrot, and young peas.

Enough to fill up the biggest bowl of ramen soup for a full dinner meal.

Bone broth as a liquid base for keto ramen chicken noodles recipe

Since I have bone broth at home all the time and make it on a regular base, making ramen with it is just an easy and quick choice.

Although in the pictures, it might look complicated it is not. Not at all.

You can use your chicken leftovers from the previous day if you like. All you have to do is assemble the plate with the shirataki and veggies of your choice.

Add boiling bone broth and garnish with boiled egg and a few pieces of avocado. That’s that. That is all you need, and your dinner is more thane perfect.

STEP-BY-STEP INSTRUCTIONS FOR DELICIOUS KETO RAMEN NOODLE SOUP 

First step: Prepare ingredients

Those do not need to be exact. The most important are noodles, bone broth, something green, something mushroomy, protein such as beef, chicken, or poultry, and a few Asian veggies to give it the feel and look.

Second step: Rinse your Shirataki

This is crucial. Most Shirataki noodles are packed in a liquid. If you do not rinse them properly, you will transfer that smell onto your dish. 

So again, rinse entirely. I rinse it usually under hot water to ensure all of the liquid they were packed in is gone entirely.

Third step: Roast shirataki

Warm up the pot over medium heat. Add oil and noodles and toss to coat them.

Roast the Shirataki noodles on medium heat in a pan or dutch oven. This will give the noodles a more pasta-like taste. Once the ramen is assembled, it tastes much better. I sometimes add a bit of salt and pepper, especially if I know I will eat them separately.

Fourth step: Prepare your protein

You can use leftover meat from the previous day, cook a quick chicken in an instant pot or just take a few pieces of fresh chicken and cook them in a pan as you would typically for other dishes.

Fifth step: Boil your veggies

Place all the veggies you plan to use into the boiling water and let it simmer for 1-2 minutes. This will make them softer and will give them a lovely green color. If you are using bigger mushrooms, place them first since they need to be cooked longer.

Sixth step: Rinse all under cold water

Once your veggies are softer, place them into a strainer and quickly run through with cold water. That will retain the color, and the veggies will stop cooking immediately. The last thing you want is to have overcooked veggies in this recipe. 

At the same time, place your broth into the pot and bring to a boil. If you like, add noodles and simmer for a few minutes.

Seventh step: Assemble

Now it is time to assemble it all. Ensure all ingredients (except avocado) are warm and your broth is boiling. 

Add the noodles into a ramen bowl first. Layer all other ingredients and add the chicken broth or soup stock as last.

TIPS AND TRICKS FOR TOP RAMEN:

  • Soup base – use chicken broth, bone broth, chicken bone broth, vegetables, meat, beef, or stocks.
  • Protein ramen soup – replace chicken with beef for a delicious beef ramen
  • Shirataki – rinse properly to get rid of fishy smelly liquid they are packed in
  • Medium bowl – use a smaller bowl if you are concentrating on portion control

FREQUENTLY ASKED QUESTIONS AND ANSWERS

Substitute for Shirataki noodles

As a substitute noodles for shirataki noodles, you can use any veggies veggies such as zucchini noodles, spaghetti squash, or palmini noodles.

If you want to go homemade, you can easily prepare keto egg noodles, fiber noodles, spaghetti, psyllium pasta, three ingredients pasta, fettuccini noodles, or soup noodles.

Low carb recipes to go with ramen

The great idea is to top up your bowl with our cloud egg or yogurt chaffle.

As some people might need a piece of bread with every food, a slice of our farmers bread, buns, or rolls would do the trick.

What other chicken can you use for Ramen?

If you are not planning to make fresh chicken as in my steps, you can easily use leftovers from our frozen chicken recipe or Crockpot chicken breast recipe.

How do you store low carb soup?

I like to make the soup always fresh since using various Asian mushrooms, eggs, and avocados will not even look nice in a few hours.

And mushrooms, eggs, and avocados need to be fresh as well.

I buy Asian ingredients in bulk and store them in the fridge. Every evening I take a few pieces from each. Bone broth is stored in the refrigerator or freezer always to be ready.

And if not, you can have Bone Broth done in less than 2 hours in an Instant Pot.

Can you freeze ramen?

I would not suggest anything from ramen noodles soup apart from the broth.

  • 200 grams Chicken
  • 50 grams Enoki Mushrooms
  • 2 Eggs
  • 100 grams Baby Bok Choy
  • 50 grams Young Peas
  • 1 Liter Bone Broth
  • 2 slices Avocado
  • 2 packets Tofu Shirataki Noodles
  • Half Stem Leek
  • 1 Medium Carrot

Instructions
 

  • Prepare your ingredients.
  • Rinse your Shirataki under a warm water fully.
  • Roast the Shirataki noodles on medium heat in a pan or dutch oven.
