But today, we are going to stay with our Keto Biscuit Recipe for that special keto biscuits and gravy breakfast.
Pork Scratchings Biscuits
My Biscuits idea comes from the original Slovak recipes, called Pagace, which I have loved and my mum made whole life. Every time we visit her, one big plate is freshly baked on the table for us to indulge in.
They are made with Pork Scratchings and Lard you get from the same recipe.
Folded into the middle of our Low Carb Biscuits gives you that unforgettable flavor, which is a perfect addition to our lifestyle.
As this recipe is one of the favorites, I have even made a mini version cheesy keto bread bites as a perfect snack to nib on.
Keto Biscuits and Gravy
The idea to develop those almond biscuits came to me when I made our Sausage Recipes, and one of them was Sausage Gravy.
I knew I needed an excellent Biscuit recipe that is keto or low carb, but I wanted it to be different.
You have so many Keto Biscuits recipes on the web that are being made to resemble the original Carbquik Biscuits. You even have a copycat of Red Lobster Biscuits but in the Keto version.
I did not want to make another same keto biscuit recipe.
The same weekend, we visited my parents, and I immediately knew what I would make.
Those delicious soft, fluffy, and crunchy Biscuits Pagace filled with scratchings were on the table once again.
I knew that my Keto Biscuits with the layer of scratching and lards instead of butter would be an immediate hit. And it was.
It took me a few trial batches until I got it into perfection, but they are here. The best Keto Biscuits one can have.
Buttery Biscuits? Not. Those are Lardery Biscuits if that name even exists.
Pork Scratchings
A big advantage is that I already have a simple recipe on the blog, where you can make your homemade Pork Scratchings and get the lard simultaneously.
These scratchings are very popular in my country, I had to make them for all of you, just in case, you can not find them in the stores.
As they are needed in this recipe, I would suggest making them in advance. All you have to do is ground them in your blender, magic bullet, or coffee grinder. Store them in the fridge as they are a perfect spread on the bread or addition to any of the dishes.
Almond Flour Biscuits
After a few trials, I have decided to use Almond Flour as the main Keto Flour in our Almond Biscuit recipe.
Almond Flour recipes give you that volume you need to replace flour without strong taste and heaviness.
Recipes with almond flour are always light and make everything fluffy. Just look at our Cupcakes. They are super light, soft as well as moist from the inside.
I have also added two tablespoons of coconut flour, which just about allowed for the dough to be thicker and more manageable to work with.
Baking Powder Biscuits
One idea came to my mind and I am for sure going to give it a try. If we skip salty pork scratchings, those beauties could also serve as breakfast baking powder biscuits together with butter and jam.
Who is going to make them first?
Traditional Biscuits are not keto-friendly at all. Filled with variations of grain flours, they usually come to approximately 45 grams of carbs per piece. That is far from what we are aiming at.
The good news is, with our Keto Biscuit recipe, you can prepare your homemade biscuits at 1 gram of net carbs per piece.

Now comes the awesomeness.
One whole biscuit made with almond flour contains 2 grams of carbohydrates and 1 gram of fiber, giving us 1 gram of Net Carbs in a biscuit piece.
That is an unreal saving of carbohydrates while still enjoying the luxury of having a perfect Biscuit to go with your meals.
What can you add to Keto Biscuits?
Before coming into actually making the recipe, I would like to give you some additional suggestions in case you would like to explore our recipe even further.
I have made the recipe very basic because I wanted to get most of the flavor from our ground cracklings.
You can add:
- Various types of cheese
- Herbs
- Garlic
- Jalapeno
- Bacon Bits
- Fresh Chives
- Fresh Thyme
- Or any fresh herbs you have in your garden growing right now.
How to make Keto Biscuits?

- Mixing Bowl
- Whisk
- Spatula
- Cling Film
- Parchment Paper
- Rolling Pin
- Round Cookie Cutter
- Egg Slicer
- Pastry Brush
Ingredients needed:
- Blanched Almond Flour
- Baking Powder
- Coconut Flour
- Egg
- Sour Cream
- Lard
- Pork Scratchings
- Egg Yolk for brushing

STEP BY STEP INSTRUCTIONS TO MAKING THE BEST KETO BISCUITS
First Step: Ingredients needed for Low Carb Biscuits
Prepare all of the ingredients for making our keto biscuits.
Regarding pork scratchings and lard, I have a perfect easy recipe you can pick and make your homemade pork scratchings.
Second Step: Dry Ingredients
Add all of the dry ingredients, almond flour, baking powder, and coconut flour into a big bowl.
Using a whisk, mix all of the ingredients.
Third Step: Wet Ingredients
As next goes, all of the wet ingredients, which in this case is an egg, sour cream and lard which has been left at room temperature to soften.
Mix once again, and using a spatula, make sure all of the ingredients are well combined, and you end up with a beautiful dough.
You can check on the video I have made for you the exact consistency of the dough.
It might still be a bit soft and crumbly, but this will harden while we chill the mixture.
Fourth Step: Chill
Place all dough onto a cling film and make one loaf to store in the fridge. Check the video for exact instructions.
The longer and thinner you shape the dough, the shorter time it will take for the dough to harden.
Leave it in the fridge for 2 to 3 hours, even overnight.
Fifth Step: Roll and Fill
As the hours have passed or even overnight, we can move on to the next step.
The first thing is to heat your oven to 180 Celsius or 350 Fahrenheit.
Take out the dough from the fridge and, using parchment paper as you see on the video, start rolling the dough.
As you see, I have rolled it into a longer shape, which allowed me to spread the ground cracklings evenly. I have folded the dough in half and, using parchment paper, rolled it into a rectangular shape approximately 3 cm or less than an inch thick.
Sixth Step: Cut Out
Using a cookie cutter or glass or a mason jar, let’s start cutting out your biscuits.
Place them one by one on a parchment paper-lined baking sheet.
If you have lots of dough left from cutting the biscuits, you can roll it again, mix the whole dough with the rest of the cracklings and make those mini Biscuits bites with cheese.
Seventh Step: Design and Brush
Once all biscuits are cut out, and on the baking tray, we can start designing them.
I have used an egg slicer to make the design, as you see, but this is optional.
I wanted those keto biscuits with pork cracklings looking precisely the same as we are used to making them in my country, Slovakia.
Once the design is done you can brush the top of each biscuit with an egg yolk.
Place in the oven and bake for 15 minutes.

How do you store Keto Biscuits?
You can store keto biscuits in a covered glass container in your refrigerator for 3 to 4 days. Anything longer, I would suggest freezing it as it contains all of that fresh ingredients.
Can you freeze Keto Biscuits?
You can undoubtedly freeze our keto biscuits without any issue.
Either place them in a glass container or a Ziploc bag.
They’re perfect even six months after and great for breakfast, snack, dinner, or a keto meal prep.

Can you use pork rinds to substitute the pork scratchings?
You could, but there would be fat missing for a spread. I would maybe ad a a bit of lard to the mixture for it to be spreadable and not too dry.
I don’t eat pork, what else can I use for the filling?
It really depends what you prefer. You can even skip the filling, but if you really want to get it as close to this recipe, the best replacement for pork scratchings will be fried chicken skins. You can also grind one of our Cheese Chips if you like.
