I always enjoy this recipe because it’s easy to make and tastes fantastic. The creamy texture and rich mushroom flavor make it a comforting dish. Every time I make it, it turns out thick and full of flavor without feeling too heavy. It’s definitely one of my favorite soups.

Yes, you can definitely make this soup in an Instant Pot. It’s super easy. First, sauté the mushrooms and onions, then add the broth and cream. Cook on high pressure for a few minutes and have a perfectly creamy soup.

How To Make Keto Cream Of Mushroom Soup Recipe

Our cream of mushroom soup is easy and one of the most flavorful soups I have ever made. Once you make this recipe, you will definitely agree with me.

Kitchen Gadgets Needed:

  • Cooking Pot: A sturdy and large pot is needed for this recipe. 
  • Bowls: Use to prepare each of the ingredients required.

Ingredients Needed:

  • Butter: compared to oil, butter gives you that extra flavor you would not expect.
  • Onion: Choose fresh white onions for the soup. If you prefer a milder flavor, shallots can be used.
  • Mushrooms: For the mushrooms, choose your favorite variety of mushrooms, such as button, cremini, or shiitake. Fresh mushrooms provide the best flavor, but canned mushrooms can also be used.
  • Broth: You can use homemade broth or vegetable or chicken broth.
  • Heavy Cream: To give our soup perfect creaminess.
  • Salt and Pepper: Should be added to every savory recipe.
  • Xanthan Gum: It is optional to thicken the soup without adding extra carbs.

STEP-BY-STEP INSTRUCTIONS FOR MAKING MUSHROOM SOUP RECIPE

First Step: Prepare Ingredients

First, prepare all the needed ingredients. Clean and chop the mushrooms to your desired size, and cut the onions into small pieces.

Second Step: Saute Onions and Mushrooms

Prepare your cooking pot and saute the onions in the melted butter until caramelized. Add the mushrooms and cook until they release their moisture.

Third Step: Add Broth and Cream

Once the onions and mushrooms are cooked, add the cream, bone broth, and salt and pepper. Bring the mixture to a boil, reduce to medium heat, and let it simmer for about 10 minutes.

Fourth Step: Xanthan Gum

If the soup is not thick enough, sprinkle a bit of xanthan gum, stir well and cook for another minute or two.

TIPS FOR MAKING LOW CARB CREAM OF MUSHROOM SOUP:

  • Mushroom Variety: Mix different mushroom types like cremini, shiitake, or portobello for a richer flavor. Sauté them first to bring out their natural, earthy taste.
  • Creamy Texture: Use heavy or coconut cream for a smooth, rich texture. Add it slowly to control how thick and creamy you want the soup to be.
  • Seasoning Boost: Add a dash of garlic, onion powder, or even a splash of Worcestershire sauce for extra depth in flavor.
  • Thickening Without Flour: Instead of flour, blend a portion of the cooked mushrooms with broth to naturally thicken the soup. This trick keeps it low carb and adds to the creaminess.
  • Garnish: Add crispy bacon bits, fresh thyme or fried mushroom slices on top for a delicious crunch and a gourmet touch.
