Nothing beats Beefsteak tomatoes, in my opinion.
They are super tasty, always in a size of a mega max, and just eating them fresh from your garden with a pinch of salt will make your day.
But as the time comes and they all start to grow, you suddenly realize you have a garden full of them.
You make tomato sauce, cook tomato salsa, try and experiment with low-carb gazpacho, and come up with some tomato bisque.
And then what else?
You start your regular canning process by using all the fresh beefsteak tomatoes, but you feel like trying something new.

- Add our crispy garlic keto croutons on top
- Garnish the soup with slices or squares of avocados
- Add basil pesto on top of the soup
- Sprinkle it with red pepper flakes for a little spicy twist
- Pour a bit of avocado oil on top
- Use herbs like oregano or rosemary, which are a perfect fit for this Italian flavor soup
- Sprinkle the soup with pieces of baked bacon
- Use our keto cheese pops on top
- Grilled Cheese
- Top it up with a bit of pork lard scratchings or dried tomatoes for an additional flavor
- Serve alongside cheesy bread bites

Our tomato soup is easy, and once you eat this soup, you will for sure agree with me. The significant part is that it is ketogenic as well, and you see how an easy meal like this can be added to a keto part into it.
Tools to make low carb tomato soup
- Baking sheet – use a regular size baking sheet for you to be able to spread all of the veggies in one layer
- Parchment paper – the best option to make your roasting cleaner friendly
- Hand immersion blender – mix the tomatoes and vegetables into a creamy tomato soup is a must
- Medium size soup pot – you would need that for combining all of the vegetables

- Beefsteak tomatoes
- Garlic
- Onion
- Fresh thyme
- Fresh basil
- Olive oil
- Bone broth
- Salt & pepper

Step by Step Instructions for making the best fresh creamy keto tomato soup
First step: Prepare ingredients
Prepare all of the ingredients. Try to use as many as you can, homegrown or in good quality.
Bone broth can be exchanged with chicken broth or any other stock.
Second step: Spread
Prepare your baking sheet and line it with parchment paper. Spread your beefsteak tomatoes cut into thicker slices. Add garlic cut into halves, and onion cut into squares. I have also added a few cherry tomatoes.
On top of the vegetables, add fresh thyme and sprinkle it with a bit of salt and pepper.
Third step: Oil
Sprinkle all with extra virgin olive oil. If you have avocado oil or any Italian-flavored oil, that will go perfectly together. Add a few drops of those as well. If I make this soup only for my husband and me, I always add chili oil to it. That gives the soup a great spicy twist.
Fourth step: Bake
Place all into the oven and bake at 200 Celsius or 400 Fahrenheit for 40 minutes. You will be surprised by the beautiful smell of the kitchen while baking. It is so good that you are ready to just take it all out of the oven and eat all of the veggies as they are. But no. Wait. Patience is a virtue.
Fifth step: Clean the stems
After all of the baking is done, clean all of the stems. Especially the baby tomatoes end and stems from thyme, which is pretty hard after baking. You want to have your tomato soup without those.
Sixth step: Add fresh basil
Once you have it all done, place all of the baked tomatoes and vegetables together with thyme into a medium size soup pot.
Tomato and basil go hand in hand. So there is no way we will be ignoring that.
Add your fresh basil leaves. Fresh basil leaves give the soup an unbelievable twist, and your delicious soup will become even better than you can imagine.
Seventh step: Bone broth
Adding freshly made bone or chicken broth will enhance the flavor of your homemade fresh-from-the-garden tomato and garlic soup. As mentioned above, the less bone broth you add, the thicker the soup will be. But on the other side, more carbohydrates it will have for you to consider. I usually add 2 cups of fresh bone broth we make weekly in our Instant Pot.
Eighth step: Mix
Use an immersion blender to mix all of it into a perfectly creamy tomato soup with fresh tomatoes. In about a minute, you will be done and ready to serve. I hope you will love this soup as much as we love it.

Can you make an easy keto roasted tomato soup recipe in an Instant Pot?
Because this is a low carb roasted tomato soup, it will be pretty challenging to bake it inside the Instant Pot. You can quickly saute all the vegetables on a saute function, add bone broth, and cook it all. But I still doubt this will be as flavorful as if you bake it inside the oven.
You can make regular easy tomato soup there. It just won’t be roasted. Still, a good choice if you prefer your Instant Pot.
Can I use canned tomatoes?
If you do not have enough fresh tomatoes, you can use canned tomatoes or tomato paste as an addition. If you are planing to start canning for your winter cooking, check the best tomatoes for canning.
Can I use canned tomato soup?
There is of course, Campbell’s tomato soup and other canned soup brands to use. But tell me. Why would you use canned Campbell’s soup when you can make your own using fresh ingredients? I know it might be more convenient, but you can also double the recipe and preserve it yourself for the future. You will have a great soup keto style always in your pantry.
Can you use the roasted tomato soup for caning?
For sure, you can. That is exactly what my mum does every single year. That way, you will have your soup ready throughout the whole year. You have to warm it up, and your dinner is served.
Can you make gazpacho out of roasted tomato basil soup?
Gazpacho is a cold soup where fresh raw tomatoes are used. So, in general, you can not call this soup a gazpacho once it cools down.
I have made this recipe with extra cheese and tomato. We served our cold creamy low carb tomato soup and grilled cheese in tiny glasses for our party and added a few keto croutons. I have to tell you. It was superb and the best soup. Everyone was asking for more. As you can see in one of the pictures I took, it also looked great and was easy to eat. So do it. Why not.
Why is my tomato soup not red?
There is various reason your soup will not turn fully dark red.
Your tomatoes are the ones that play a significant role. Some of them are not always intense red color, although by roasting them, the color intensifies, it might still not be enough red for your liking.
Adding onions and garlic will make the soup further much lighter.
Therefore I always prefer to add purple onions to our tomato soup. They will add not only a perfect flavor but color as well.
But in the end, it does not matter what type of red color your soup looks. It still is red, sometimes it might be a bit orange. But it tasted unbelievable. And that it is all that matters.
How to make creamy tomato soup?
You can make your low carb tomato soup even creamier by adding either sour cream or whipped cream to it. I do that from time to time, and it makes the soup that extra tad creamier.
How can you thicken tomato basil soup?
If you feel your keto soup is too liquidy, either because you have added too much bone broth or because you prefer it a bit thicker, there are some solutions as well.
- Avocados – using soft avocados mixed into a soup will immediately thicken it and make it even more flavorful.
- Less Broth – Next time, add a less bone broth to make it thicker if you do prefer
- Cauliflower – You can also thicken your soup by adding baked cauliflower into the soup.
- Xanthan gum or gelatin – those will do the same job for thickening. Just be extra careful with Xanthan. You need a tiny little amount of it. Otherwise, your soup will turn into a giant spooky slime.
What to serve with keto tomato soup?
As a kid, bread was a must. So my suggestion is to make our keto farmer’s bread and serve it together with it. You can also make a grilled cheese sandwich bread from it and serve it.
A perfect addition to our bread collection is those lovely keto Italian breadsticks you can use for breakfast, dinner, with your soup, or as a snack during the day.
Pick any keto bread from our selection, and all will go perfectly.
Be it keto wraps or greek yogurt buns. All are good to go.
How to store low carb tomato soup?
Once your soup is done, you can store this soup in the fridge for up to 4-5 days.
Can you freeze keto roasted tomato basil soup?
Freezing is what I do most of the time. Just fill up your Mason Jars and keep them inside the freezer for whenever you need a quick dinner with no time on hand to cook a full meal.

Ingredients
- 3 Beefsteak Tomatoes

- 1 Medium Purple Onion
- Thyme
- Olive Oil
- 1/2 Cup Fresh Basil

- 2 Cups Bone Broth
