STEP-BY-STEP INSTRUCTIONS ON HOW TO MAKE LOW-CARB TACO CASSEROLE
First Step: Prepare all Ingredients for Taco Casserole
First of all, prepare all the ingredients for your taco casserole.
You are going to be cooking ground beef together with taco seasoning first.
If you do not have taco seasoning packets, you can check our homemade keto taco seasoning recipe.
Second Step: Taco Beef making
Heat your skillet over medium-high, add olive oil and cook the ground beef for approximately 10-15 minutes.
Once you brown the ground beef, season it with taco mixture, mix it thoroughly, and let it cook for an additional 10 minutes.
When your taco meat is fully cooked, you can place it into the bowl for assembling or leave it in the pot.
Third Step: Start Layering into the Casserole Dish
Once your ground beef is seasoned with taco seasoning, you are ready to start layering it into the casserole dish.
First place taco meat, making sure it covers the whole base of the casserole dish.
On top of that goes sour cream.
Using a spatula, spread the sour cream so it is fully covered.
As a third layer goes shredded cheese which has been granted just before.
As you see, I have used a mixture of cheddar cheese and mozzarella, but it depends on you what type of cheese you will pick.
Make sure the cheese mixture is fully spread onto the casserole.
Fourth Step: Bake and cool
Place the prepared casserole into the preheated oven and bake for 15 minutes at 300 Fahrenheit or 180 Celsius.
Once baked, take it out of the oven and prepare for layering.
Fifth Step: Layer Toppings
This step will start placing all the toppings you have prepared for our low-carb taco casserole.
As the casserole is not being baked again, you can layer whatever fresh vegetables or toppings you would like to.
In our case, it is salad leaves, broken-up taco cups shells, olives, and diced tomatoes.
Sixth Step: Finish with Avocado and sauces.
Lastly, sprinkle with Avocado pieces and freshly chopped Cilantro.
You can add extra sauces such as Guacamole, Salsa, Greek Yogurt, or Salsa dressing if you like.
Tips and Tricks
- Type of cheese – I have mixed mozzarella together with cheddar cheese, but you can use almost any hard cheese which easily melts in the oven, such as Mexican cheese blend, Emmental cheese or Colby Jack.
- Sour Cream – can be replaced with Greek yogurt or cream cheese
- Meat – our recipe is made with ground beef, but you can use ground pork, ground turkey, or poultry meat.

Can I make Taco Casserole ahead of time?
You can certainly prepare your taco casserole ahead of time.
You can bake it well in advance and then just reheat it in the oven for a few minutes.
All the toppings, I would add only as of the last since fresh salads, tomatoes, and everything else will heat up together with the casserole and will not taste the same anymore.
How do you store Ground Beef Taco Casserole?
Once your casserole is served and you have some leftovers, you can easily store it covered in the refrigerator for 3 to 4 days.
Anything longer, I would suggest freezing it, but of course, without all the toppings.
Can you Freeze Keto Taco Casserole?
You can undoubtedly freeze our keto taco bake, but I suggest freezing only the base baked dish, and all the toppings used fresh whenever you’re ready to serve.
