Wild Garlic

Wild Garlic, Ramson, or Ramps, as some might call it in the US, is a springtime herb or green leafy plant native to Europe and Asia, where it is freely grown in woods. 

Being a part of the onion family, wild garlic has its beautiful garlicky smell, and that is how it is distinguished from all other leafy greens.

At the beginning of the spring, every single year, my family and I make sure that one of our weekend trips is to go picking edible wild garlic in the woods. 

Every year, I make our famous Recipe for Wild Garlic Pesto, which lasts us in the fridge the whole year long. 

Cooking Wild Garlic

Cooking with wild garlic is always exciting at this time of the year because Wild Garlic is the first leafy green you can have, and your kitchen gives you that perfect fresh spring aroma with a pinch of garlicky smell. And it does not grow for long. You have a few weeks, and then all is gone. 

Like any other leafy vegetable, Wild Garlic is a perfect addition to your salads, butter, and as a part of cooking, especially for soups, sauces, or marinades. 

And because we always pick more than 1 big bag, there is always so much left for the most popular greens Chips in the family.

What does Wild Garlic Look Like?

Wild Garlic has broad green leaves in various sizes. Each single leaf grows on its own. When squeezed in between your hands, wild garlic has got a real garlicky smell and that is the main point to distinguish. 

Can you eat Wild Garlic?

Yes, you can eat wild Garlic. Rampson or Ramps, as some might call it, is Edible Wild Garlic.

When do you pick Wild Garlic?

Wild garlic is usually picked at the early signs of spring, just when its baby leaves start growing in the woods. It is best to pick the baby leaves as they have the most flavorful taste and aroma. 

It is also suggested to pick Ramson as early as possible because of mixed confusion with the poisonous Lily of the valley, which starts growing later on. 

How to distinguish between Wild Garlic and Lily of the valley?

Once you go into the woods and pick wild garlic, you will realize those two species look different. But not everyone can distinguish the differences. 

Wild garlic smells really like garlic, and that is a great sign. When not sure, I usually break the leaves between my fingers and smell. But if you are still not sure, do not touch any. 

One additional point to look for is that wild garlic has each of its leaves growing individually from the ground compared to Lily of the valley, which has two leaves on one stem.

What is Wild Garlic used for?

Wild Garlic has been used in the kitchen for centuries.

One of the most popular recipes is making a perfect Wild Garlic Pesto, which assures you that you have got this spring herb throughout the whole year. 

Other great uses in your kitchen are to add Wild Garlic into:

The great news is that you do not have to use only Wild Garlic with our recipe. 

Wild Garlic Greens Chips are fantastic, but as I have already mentioned above, you can utilize them only for a few weeks a year.

But the significant part is, that instead of Rampson, you have a wide variety of Leafy Greens that are perfect to use.

All you have to do is to follow the recipe and just change the leaves for:

  • Kale
  • Mustard Greens
  • Chard
  • Collards
  • Spinach
  • Bok Choy
  • Broccoli leaves
  • Beet Leaves

And much, much more. 

Store-Bought Vegetable Chips

As we are making those perfectly easy vegetable chips, I have to mention the fact that you can also buy already ready-made chips that are either made from one of the leafy herbs or vegetables. 

I have experienced that some brands do really contain only the actual vegetable and salt or oil. But there are brands which I was shocked by how much sugar and starches and additional ingredients I did not even recognize were included.

So please, if you are buying, always read the labels.

How to make Wild Garlic Greens Chips?

Kitchen Gadgets needed:

  • Mixing Bowl
  • Baking tray
  • Parchment paper

Ingredients needed:

  • Wild garlic
  • EVO oil
  • Shredded cheese

STEP BY STEP INSTRUCTIONS TO MAKING THE BEST WILD GARLIC CHIPS

First Step: Ingredients for Wild Garlic Chips

First, heat your oven to 160 Celsius or 320 Fahrenheit.

Prepare your fresh wild garlic leaves, extra-virgin olive oil, and shredded cheese.

It is best to shred your cheese at home as store-bought pre-shredded cheese contains extra starches, which will raise our carbohydrates intake.

Second Step: Extra Virgin Olive Oil

Place all of the wild garlic leaves into a mixing bowl and sprinkle with extra virgin olive oil.

Gently mix all of the oil in, making sure each leaf layer is covered.

Third Step: Layer Leaves

On a baking sheet covered with parchment paper, layer each of the wild garlic leaves one by one.

Fourth Step: Shredded Cheese 

Sprinkle it with your shredded cheese.

In this step, you can add additional spices, herbs, or different types of Jesus.

Fifth Step: Bake

Bake in the oven for approximately 13 minutes.

Tips and Tricks:

  • Leafy greens – can be used instead of wild garlic following the same method
  • Herbs and spices – additional herbs or spices can be added as well

How do you store Greens Chips?

It is best to eat wild garlic greens chips or other leafy vegetable tips straight away.

Storing them for longer might make them lose their crispiness.

But if you too want to store them, then in a glass container or airtight container fully closed in your refrigerator for approximately 3 to 4 days.

Can you freeze Greens Chips?

I would not suggest freezing any of the leafy greens chips as they will not retain their crispiness anymore after towing them for consumption.

Ingredients

  • 100 grams Wild Garlic
  • 1 Tablespoon Extra virgin olive oil
  • 5 grams Shredded Cheese

Instructions

  1. Heat up the oven on 160 Celsius or 320 Fahrenheit
  2. Clean and dry wild garlic
  3. Place in a bowl and add 1 Tbsp Extra virgin olive oil and mix well, so each leave is coated with oil
  4. One by one place leaves on a baking tray covered with parchment paper. The leaves should not be over each other
  5. Grain hard cheese and sprinkle on already placed leaves
  6. Place in the oven for circa 13 minutes
  7. Bon appetite

      I have only knew the wild garlic pesto, which we love. But since we had it at home and my daughter loves veggie chips, I tried it and its a real winner.
