I’m not sure where you come from, but we used to have the best treat one can have in the supermarkets when I was growing up. 

And guess what it was. 

It was Condensed milk filled in small squeezable tubes. 

Condensed milk was and still is one of my favorite treats. 

Before we started our Low Carb lifestyle, every time I visited Slovakia, I had to buy a few tubes of this delight. And every time I opened one box, I had to finish it in a day. Can you believe it? Plain condensed milk.

The excitement I have right now is that I can have it again after many years. 

And again. 

Without any desserts. 

Just like that. 

Just as it is. 

For me, condensed milk is a dessert on its own, and I guess it will always stay like this.

So here we are. 

A perfect Keto Dessert, you kids might grow to love.

What is Condensed Milk?

Condensed milk is milk or a heavy cream cooked until most of the water evaporates and gets a smooth thick form of consistency.

Condensed milk comes in various forms:

  • Condensed milk unsweetened – where you use only thick milk or heavy cream
  • Sweetened condensed milk – where you add sugar to melt into a smooth thick consistency
  • Sugar-Free Condensed milk – where one adds one of the sugar substitutes to mimic the original 
  • Vegan condensed milk – where you can either use oat milk or rice milk instead of regular milk and replace butter with olive oil
  • Dairy-Free condensed milk – where one uses coconut milk and lard or olive oil

Why should you make your Homemade Condensed Milk?

Homemade condensed milk, especially in sugar-free form, is a quick and straightforward idea to make at home for various reasons.

  • You are using the exact low-carb sugar sweetener you are used to and have experience with. 
  • You see and control what ingredients go in without adding other artificial substitutes.
  • It is always fresh as it takes only a few minutes of your time
  • The price of homemade condensed milk is incomparable to a store-bought Keto condensed milk. 

Can Diabetics eat Condensed milk?

Yes, even a Diabetics can eat condensed milk. They can, of course, consume regular sweet condensed milk, which is not advisable because of the high amount of sugar and carbohydrates. 

The best would be unsweetened condensed milk. 

But now, there is a simple and healthy option you can make in your home in just a few minutes.

And that is our Sugar-Free Low Carb condensed milk recipe. 

What sweeteners to use for making Keto Condensed milk?

The best sugar substitute to make smooth, thick, and creamy sugar-free sweetened condensed milk goes from the top to the most favorable.

  • Allulose Sweetener, which gives you an additional extra creamy texture. 
  • Xylitol, with a still smooth consistency, but few additional carbohydrates to count in.  
  • Blend of Allulose and Monk Fruit Sweetener adds extra gooeyness to this gluten-free condensed milk.
  • Erythritol is the least favorite choice for making your homemade condensed milk, as it might crystalize once cooled. 
How many carbs are in Sugar-free sweetened condensed milk?

Compared to 30 grams of carbohydrates using an ordinary original and real sugar-sweetened condensed milk for a portion, which is 3 Tablespoons, our recipe has got a total of 0 carbs in condensed milk. 

The whole recipe I am introducing you to has got a total of only 2 grams of carbohydrates. 

That should be at least one of the reasons to give it a try and make this wonderful recipe right now.

Can you make Sugar Free and Dairy Free condensed milk?

As we can transform almost any recipe to Keto, Low Carb, or Sugar-Free, changing it into Dairy-Free is easy with swapping just a few ingredients.

As heavy cream and butter are not a part of the Dairy-free option, full-fat coconut milk or a coconut heavy cream together with olive oil is a perfect replacement.

How to make Sugar-Free Caramel Condensed Milk?

If you would like to make your own caramel condensed milk with our recipe, there are two options.

  1. You can add a few tablespoons of our sugar-free caramel sauce to the mixture.
  2. Let the condensed milk cook longer until it turns slightly brown and thicker.

STEP BY STEP INSTRUCTIONS FOR LOW CARB HOMEMADE CONDENSED MILK 

First Step: Sugar-Free Condensed Milk Ingredients needed

Prepare all of the ingredients. 

Regarding the Sugar Substitutes, I have mentioned above the best choices for you to work with. 

Xanthan Gum is in this recipe optional, depending on what amount of condensed milk you would like to get at the end.

Second Step: Melt Butter

Start melting the butter in your saucepan over medium heat. 

To prevent the butter from burning, cooking on medium heat is best while watching butter at all times.

Third Step: Sugar & Heavy Cream

Once your butter cooks for a few minutes, you will see the color changing. 

Be careful in this step, as the butter can burn in no time. 

Switch the heat entirely and immediately add your sugar sweetener and mix.

Add your heavy cream.

Fourth Step: Whisk

Whisk all together. Make sure all sugar melts and incorporates into heavy cream and butter.

Fifth Step: Xanthan

Pinch by pinch, add your Xanthan Gum, and whisk in between thoroughly, making sure Xanthan gum is fully incorporated. 

Using Xanthan Gum is optional. I wanted to have a substantial amount of Condensed milk in this recipe, and Xanthan Gum allows me to do that.

If you do not want to use Xanthan Gum, you can skip this step and cook the mixture until most of the water evaporates. 

You would still get your perfect Sugar-Free Condensed milk, just a bit less of it.

Sixth Step: Cook

Switch the heat on and start cooking.

The Xanthan Gum starts working and making the whole keto sauce thicker in this step. You might not see it immediately as it thickens much more once it cools. 

Let it cook for approximately 5 minutes until you have a smooth consistency.

Just in case your Xanthan Gum does not fully dissolve, and you might see a few lumps you can not dissolve, place it for a few seconds into your blender and blend. 

Once you are happy with the consistency – it will thicken as it cools – switch the heat off.

Seventh Step: Vanilla Extract

Add a few drops of Vanilla Extract, whisk again, and pour into a Mason Jar or any bottle with the lid.

Tips and Tricks

  • Too thick – If you see your condensed milk has thickened more than expected, warm it up on low heat in a double boiler and add a few Tablespoons of Heavy Cream.
  • Too liquid – Not thick enough? Cook the mixture a bit longer. Do not add Xanthan gum, as your condensed milk will become one gooey, slimy thing. 
  • Gritty – You might experience some grittiness once cooled when using erythritol. Erythritol sometimes doe recrystallizes back. Just reheat the mixture and serve. 
  • Xanthan Gum – can be replaced with Guar Gum, but double the amount
  • Xanthan gum not dissolving entirely – place the whole mixture into your blender for a few seconds
  • No xanthan – If you do not have or do not want to use Xanthan Gum, simple let the mixture cook longer for approximately 30 minutes
  • Reheat – to prevent your condensed milk from burning or turning into caramel. It is best to reheat it in a double boiler.

How to store Keto Condensed Milk?

As condensed milk contains heavy cream and no preservatives, I suggest storing it in a Mason Jar or a bottle with the lid in your refrigerator. 

How long can you store homemade condensed milk?

Appropriately stored in a closed glass or a jar, this homemade condensed milk should be ok for two to three months.

If longer, place it into your freezer. 

Can you freeze Condensed Milk?

You certainly can freeze condensed milk either in a Mason Jar or a freezable container. 

What recipes can you serve condensed milk with?

Even though you might have read, I do not use it on anything as this is the single best Keto Dessert one can have. Plain. Without anything. Just like this. A tablespoon every hour of the day.

    how do i make low cost sweetened condensed. i mean i should regain 80-100% of the ingredients to save cost and also the product should be yellowish and thicker.
