Who can resist an Eggnog flavor in a Keto Ice Cream?
Eggnog Popsicles for Christmas
I know, some of you might ask, why would you serve a frozen keto dessert during wintertime.
Well, let us say you are not from the winter wonderland part.
Let us say you live in Australia and your Christmas is with a full blast summer. Or Florida for that matter.
Or Caribbean Islands, where we lived, and I have forced my family to eat traditional Sauerkraut Soup just because it is the must. The whole family wished to replace that with something frozen for a change.
Eggnog Ice Cream
As you see, I have chosen to make Popsicles with this recipe, because it is the easiest way to make a quick frozen treat.
How To Make Keto Eggnog Ice Cream?
But as the consistency is super creamy and on a softer side, I can just imagine adding the mixture into your Ice Cream Maker and producing a perfect keto Eggnog Ice Cream in no time.
What spices can you add to Eggnog Ice Cream?
Where I come from, we do not add any spices into an actual eggnog drink. As it is most popular around Christmastime and Easter, there are always lots of cookies and treats with special spices and the pure eggnog is just an addition.
Therefore, I have not added anything else except Vanilla Extract into our Sugar-Free Popsicles.
But if you would like, you can add
- Cinnamon
- Nutmeg
- Gingerbread spices
- Pumpkin Spice
- Cloves
This was going to be my suggestion for all the adults. Even though my recipe is Non-Alcoholic, I would suggest making a few Popsicles for your little one and then adding 1-2 Tablespoons of rum into the rest of the batter.
Do not add more, even when it is tempting, but as alcohol does not freeze, you might end up with a pure eggnog non-frozen drink, which is also not a bad idea.
Whatever consistency you will choose, both the drink or ice pops would for sure be delightful to enjoy.
That would be labeled especially for the grown-ups.
As heavy whipping cream with its fat content gives you the softest texture and consistency for your frozen dessert, that is what has been chosen.
But you can certainly replace it with one of Keto Milk Alternatives.
I would suggest Almond milk as it has got the least additional flavors.
Or you can go for Coconut Milk or Coconut Cream to produce Spanish Coquito Eggnog Popsicles.
What are the best Sweeteners to use in Keto Ice Cream?
From my own experience, I have concluded, that Allulose Sweetener is the best of all for making any of the Keto or Low Carb Frozen Treats.
Allulose gives you that additional soft texture while freezing the ice creams. Allulose also prevents any keto ice cream from becoming rock hard.
Of course, not all of us might have Allulose on hand, and in that case, you can use any Keto Sweetener you are regularly using while adding a dash of Glycerine or any alcohol to soften it.

STEP-BY-STEP INSTRUCTIONS ON MAKING YOUR OWN KETO EGGNOG ICE CREAM POPSICLES
First Step: Prepare Ingredients for Eggnog Ice Cream Popsicles
Prepare all of your ingredients. Your heavy cream should be cold for a better whisk.
Eggs, on the other side, are room temperature.
For Allulose or sugar substitutes, I would suggest choosing powdered sweeteners, as that is much easier to melt into the ice without grittiness.
If you only have crystallized sweetener, quickly grind it in your blender, coffee grainer, or a Magic Bullet.
Second Step: Heavy Cream Preparation
Pour your heavy cream with one tablespoon of powdered sweetener into the tall glass container. Add vanilla extract.
Using your Hand Blender, whisk until stiff peak and place aside.
Third Step: Egg Whites into Fluffiness
In another glass container, whisk egg whites until soft peaks. Place aside.
Fourth Step: Egg Yolks mix
And a third glass jar with egg yolks and the rest of the powdered sugar. Whisk this super yummy combination until fluffy.
Fifth Step: Combine all
Using your spatula, gently fold all the 3 deliciousness into one triple delicious mixture.
Sixth Step: Filling your Popsicle Molds
Using your Popsicle Molds, start gently filling them all using your spoon or a spatula. As this mixture is very light, you might bang it against the kitchen counter to get rid of as many bubbles as possible.
It will also help for the cream mixture to fall right down into the molds.
Seventh Step: Add Wooden Sticks and Freeze
Once all of your molds are filled, add into the middle of each popsicle a wooden stick.
Push it approximately into ¾ deep.
Place into your freezer and freeze for 2-3 hours, best overnight.
Eighth Step: Dip in Chocolate – Optional
As this step is optional, I have not added ingredients into the nutritional calculation.
You can dip a frozen Eggnog Popsicle into our Chocolate Magic Shell. Place it into a tall glass, which is wide enough for your popsicle to lightly be able to be dipped. Do not dip it into a hot chocolate mixture, as that might melt the popsicle.
You can also sprinkle the ends with pieces of almonds or our Homemade Keto Sprinkles.

FREQUENTLY ASKED QUESTIONS AND ANSWERS
How do you store Keto Eggnog Popsicles?
Once your Popsicles are frozen in the Molds, you can take them out of the mold and, using cling film, cover each one individually.
Once a single packed, I usually add them all into a zip log bag.
This way, you have a single serving prepared whenever needed, and additionally, to it, they will not take so much space as Popsicles Molds might.
How long can you keep Keto Popsicles in the freezer?
If properly stored and covered, they can be kept for approximately 3 months or more in the freezer.
