My first experience with food dehydrator was when we lived in Qatar and certain vegetables were available only a few weeks a year. You will be surprised. As an example
The same applied to vegetable markets. The freshest vegetables you got, was directed at those markets, but you were only able to buy a whole box. So if you wanted broccoli, for instance, you had to buy a whole box (20pc). The best way was to go always with a friend and split the boxes, but you still ended up with so many vegetables that you were not able to consume in a few days.

At this time I was reading a lot about how best to store the vegetables. So many people have suggested investing in a Dehydrator. So there I went and purchased one. Then for the next few months, I was dehydrating everything I could think of. The machine was going on full blast day and night.
Why do you dehydrate?
Difference between drying in the oven and dehydrator is, that dehydrator dries everything to a maximum of 70 Celsius throughout few hours. Sometimes 8-12 hours depending on the type of food you want to dehydrate. In this way, it is claimed, that vegetables or fruits or whatever you are dehydrating, keep most of their vitamins. Once dried, you can keep the veggies for a long time.

First Step: Slice Zucchini

If you do have a bread or meat slicer, I always use the thickness at N1.
Second Step: Add Oil for the better crunch
Adding oil to make dehydrated zucchini, help them to be a bit more crunchy. This is really optional. I have also dried zucchinis without oil, but we still prefer to sprinkle them with oil a bit. Especially if you are using additional spices, where they nicely soak in and are spread evenly.
Just be carefull not to add too much of an oil, otherwise they will never dry and will become soggy and oily even after hours of dehydrating them.
Third Step: Season
Add seasoning and spices of your choice. In our recipe, we have seasoned them with fresh thyme, dry garlic, salt and sesame seeds. A combination of those spices together with sesame blends in perfectly for a tasty zucchini chips.
Fourth Step: Mix
With your spatula (or hands if you prefer) mix olive oil and spices together fully, making sure each single zucchini slice is covered. You really might use your hand for a real perfection, since all of the zucchini slices are most of the time stuck together.
Fifth Step: Spread
Spread zucchini slices onto a dehydrator rack in a single layer. While spreading them onto a tray, make sure the oil and seasonings are spread evenly on each single zucchini slice from both of the sides. Follow the process until all of the trays are filled.
Sixth Step: Dehydrate
Stack all of the dehydrator trays on top of each other and close them with a lid on top. This is in the case of the dehydrator I use, which is the simplest round shape one we have. Depending on your dehydrator, follow the instructions as per your brands.
Switch the dehydrator on 70C or 150F and set the timing for 8 hours.
Make sure to switch the trays every 2 hours or so to make sure all of the zucchini chips are dehydrated evenly.

What temperature to dehydrate zucchini?
As you would use dehydrator for making zucchini chips, there is not really a big choice in temperature settings. Some dehydrators might have a bit bigger spam, but most are able to move the temperature between 120F – 150F (50C-70C) Lower you set the temperature, longer it will take for dehydrated crisp to become done and fully crisp. I normally use the highest temperature, because even the highest is one of the lowest on in the oven settings and till now I had not once burn anything.
Although health-wise they say, that the lower your temperature is set for drying, the less vitamins are being destroyed. So it really depends in your choice.
How long does it takes to dehydrate zucchini?
For the zucchini chips made in a dehydrator takes approximately 7-9 hours, depending on how thin or thick you slice them initially. I do like to slice them a bit thicker, because in my opinion, they taste a bit better as the completely thin almost like
Why are my zucchini chips soggy?
There are few reasons, why your zucchini chips might become soggy.
- You might have used too much oil.
- If you leave them to dehydrate too short, they might stay soggy.
- Storing them in the airtight container is very important to keep the crispiness.
But everything has a solution. I normally just place them into the oven on the lowest temperature for half-hour and they regain the crispiness again.
How to store dehydrated zucchini chips?
Storing zucchini chips is a bit tricky. They have to be stored in an glass air tight container, otherwise they will loose the crispiness. You can also use Mason Jars if you have some on hand.
How long do dehydrated zucchini chips last?
Once dried fully, they last pretty long if stored properly. Again glass air tight container or Mason Jars are the best options. I have experienced with 1-2 months already and they were still perfect.
How to make dehydrated zucchini chips in oven?
Very similar instructions as with dehydrator, in the oven they have to be baked on the lowest temperature. i usually use 50C ( 120F) for 3-6 Hours as this is the lowest my oven allows me to bake. But if I use oven, I make sure to check them regularly and might turn them half way for both of the sides to be able to bake. In the oven they do turn a bit brownish, but that is not a problem. they still taste really good. You just need to watch for them not to burn.
Can you freeze zucchini chips?
You can, but you have to remember that the will not be crispy after freezing them. But as I have already mentioned above, just place them back into the oven for half hour on the lowest temperature and they will become crispy again.
What to dip zucchini chips in?
We normally eat them as they are, just plain as an easy low carb snack. But you can use various dips you would normally use for tortillas or any chips you are used to.
In our instance, I always use yogurt or souercream as a base and add either avocado, cheese, some spices and a bit pf garlic. Depending on whats at home and whats in the fridge.

Using a dehydrator is the best choice you can have not only for vegetables. You can dehydrate almost all of the veggies, mushrooms, tomatoes, all of the root vegetables, cucumbers, green leaves such as kale, mangold, ramp, various meats, salami, ham, bacon, all the cheeses, mixed seeds for crackers, mixed berries for leather skins, or just plain berries.

- Clean and dry zucchini
- Cut them into a thin slices either on a bread/meat cutting machine, or by hand at the thinnest. I have used bread machine on N1.
- Place all the zucchinis into a bowl, sprinkle with olive oil, freshly ground thyme, sesame seeds, salt and garlic.
- Gently mix all together and place it onto the dehydrator plates.
- Switch the dehydrator onto the highest ( in my case it is 70 C or 158 Fahrenheit)
- Switch the plates every 2 hours to get the drying process evenly.
- Once done store it in the airtight container or enjoy it in 2 minutes as we did ( or one person in our family did)
