The basic recipe is super easy to make, combining 1/2 cup of cheese with 1 egg.

My Chaffle Story
The first I heard of chaffles was during a holiday. I just ignored it.
Later I have seen it in our Facebook group on several occasions and all over the net, taking the keto world by storm.
You know how it goes. Everyone raves and you get into wanting to have that feeling as well.
This forced me to experiment a bit. For my first chaffle, I tried some recipes using a regular waffle maker and our ordinary grill, which has waffle grid irons from one side. I did not really get excited and left it.

Just because it looks like a waffle does not mean it tastes like a waffle. Do not expect that.
Chaffle taste like a crunchy piece of savory bread. A crispy burger bun you can have for your breakfast.
How do You Make Easy Keto Chaffle?
I decided to go with a softer version. Soft on the inside but still crunchy on the outside. Perfect choice for chaffle sandwiches.
And that is precisely what one tablespoon of greek yogurt can make for you.
I also added a pinch of psyllium, which I usually do for our bread recipes. Since I do treat those chaffles as bread. The psyllium helps hold the ingredients together and gives them a bit more bread-like texture.

Ingredients needed:
- Mozzarella cheese
- Almond flour
- Psyllium husk
- Baking powder
- Yogurt

STEP-BY-STEP INSTRUCTIONS ON HOW TO MAKE A CHAFFLE THAT IS CRISPY AND LOW CARB
First Step: Prepare Ingredients
Prepare all of the ingredients.
The recipe gives you 3 chaffles. Double the recipe or triple, depending on how many you plan to make.
Shred your mozzarella finely, as this makes the chaffles much softer.
Second Step: Heat your Dash
Heat your dash or waffle maker. It needs to be fully heated before you start. Otherwise, the batter will stick to the skillet.
Third Step: Chaffle Mixture
In a bowl, mix eggs first with a fork. Add additional ingredients except for mozzarella and mix properly. Once the dough is thoroughly mixed, add shredded mozzarella and mix full once again. Let it sit for a few minutes as the psyllium starts working.
Fourth Step: Spray
This step depends on whether you have a nonstick waffle maker. Mine is not fully nonstick, so I spray the whole waffle maker with extra virgin olive oil. This is enough to do the first time. If you double or triple the recipe, spray the waffle maker after every 3-4 chaffles.
Fifth Step: Cheese as a Base
To have the chaffles perfectly crispy, add a bit of shredded cheese on the waffle iron and wait until the cheese is melted.
Sixth Step: Dough
On top of the cheese, add one big spoon of dough into the middle. Do not add too much. Otherwise, your keto chaffle will start spreading all over through the maker. I always make 3 chaffles from this recipe and split the dough into 3 portions.
Seventh Step: Top it up
On top of the dough, add again a few pieces of shredded mozzarella to get the crispiness from both sides of chaffle.
Eighth Step: Cook
Close the lid and let it cook for about 3-4 minutes.
Try to avoid opening the Dash maker through the process. Otherwise, you will end up in a mess. Generally, once the big steam stops, it is the sign the chaffle is almost ready. Some waffle makers also have a light, which lets you know when the chaffle is finishing.
The longer you cook it, the crispier the chaffle become.

- Cheese – Finely shredded cheese works much better. Do not use pre-shredded cheese, as it contains additives and flour to keep the shreds apart.
- Cook – Till the maker stops steaming – about 3-4 minutes.
- Extra soft – add a bit of cream cheese in.
- Extra crunchy – Add shredded cheese to the waffle maker and cook a bit longer for more crispiness.
- Too eggy – Replace the whole egg with only egg whites if you feel they are too eggy for you.
- Opening in between – Do not open the Dash maker while cooking. The chaffle might tear apart. Trust me. I have tried it.

Take them out of the freezer the night before and let them de-freeze throughout the night. In the morning, heat them in the oven or place them into the toaster for crispiness.
How to Clean Dash Mini Waffle Maker?
This is a great question and a job I struggled with initially. When trying to perfect the recipe, I occasionally added too much dough onto the chaffle maker, which ended up in a big mess. And the worst was when the cheese cooled down and got sticky.
Now I have got a few tricks which might help you.
If you, by the incident, add too much dough in and throughout the cooking process see that part of the dough starts falling, use the end of the fork to take that part out and let the chaffles cook without dripping.
Once done, use a wet paper towel to wipe up all leftovers. Try to make this while the waffle maker and the cheese are still hot.
I have also discovered that using a small brush or a toothbrush helps eliminate those unwanted tiny pieces you can not reach otherwise.
