Ingredients

  • 500 grams Minced Meat
  • 1/2 Cup Onion
  • 2 Garlic Cloves
  • 1/4 Medium-Size​ Pumpkin
  • 1/4 Medium-Size Pumpkin cut to squares
  • 1/4 Cup Parsley
  • Olive Oil
  • Salt
  • Rosemary

Instructions

  • Heat Up the Oven to 180C or 350F
  • Wash and clean the inside of a Pumpkin and cut one quater of a Pumpkin into smaller squares. Place into a bowl and set aside.
  • The other quarter of a Pumpkin needs to be shredded with a Cheese Grater or using your kitchen machine if you wish.
  • In a big bow combine minced meat with all of the ingredients. Add the Grained Pumpkins into it. With a spatula or using your hands, mix the whole lot properly and using your hands to shape smaller size bowls preferably all the same size.
  • Once all of your balls are shaped and ready, spread them on a baking dish you have chosen. Using a parchment paper underneath is a big advantage you will realize while washing the dishes.
  • Once the Keto Pumpkin Meatballs are spread around the baking dish, add in between the pieces of a Pumpkin squares you have cut before.
  • Lightly spray the whole tray with Extra virgin Olive Oil.
  • In the end, add a few branches or fresh rosemary on top of the baking tray.
  • Bake for 40 minutes and enjoy.
