  • 2 1/2 Cups of Heavy Cream
  • 1 Cup Mascarpone
  • 1/3 Cup Sweetener
  • 1/2 Cup Red Currant

Instructions

  • Gather the ingredients: eggs, sweetener, cocoa powder, heavy cream, mascarpone cheese, and fresh red currants. Preheat your oven to 170 Celsius or 340 Fahrenheit. 
  • Whisk the egg whites in a clean, dry mixing bowl until stiff peaks form. Set aside. Whisk the egg yolks with the sweetener in another mixing bowl until well combined. Fold in the whipped egg whites gently. Add cocoa powder to the egg mixture and mix until thoroughly incorporated.
  • Pour the cake mix onto the prepared pan and spread it evenly. Take the pan and bake the cake in the oven for approximately 30 minutes or until a toothpick inserted into the center comes out clean. Once baked, remove the cake from the oven and let it cool completely.
  • While your cake is baking, you can prepare your topping. In a mixing bowl, whip the heavy cream until stiff peaks form. Set aside. In another bowl, whip the mascarpone cheese with the sweetener until smooth and creamy. Gently fold in the whipped cream until well combined. 
  • Add a handful of red currants to the mascarpone mixture and fold them gently.
  • Once the cake has cooled completely, layer cake with mascarpone topping evenly over the surface. Place the cake in the refrigerator to allow the topping to set.
  • After the topping has been set, remove the cake from the refrigerator. Take it out of the baking pan and slice the cake into 12 pieces. Dust the slices with fresh cocoa powder, which, together with sweetener, are the only dry ingredients here. Garnish each slice with a few red currants and a sprig of mint for an elegant touch.
