Instructions

  • Heat up the oven for 170 Celsius or 350 Fahrenheit. Prepare all of your ingredients together with a tablespoon of gingerbread spices. Separate an egg and use egg white for the dough. Place the egg yolk into a separate bowl to be used at the end.
  • In a big glass bowl, mix all the dry ingredients together. Once you make the dough, use a piece of plastic wrap and place it into the refrigerator for an approximately half hour.
  • Place the gingerbread cookie dough onto a silicone sheet or parchment paper sprinkled a bit with protein powder or almond flour to prevent sticking. On top of the dough place a parchment paper and with a rolling pin and roll the dough thinly. 
  • Using your favorite cookie cutter, cut the rolled dough into shapes, which you can immediately place onto the baking tray covered with parchment paper. 
  • Whisk your leftover egg yolk with a fork or whisk. You can add a few drops of almond milk if the consistency is too thick. Using your brush, brush the mixed egg yolk on top of each cookie.
  • What to decorate your cookie is really up to you. Above I have mentioned a few tips and suggestions you can use. I have used almonds as the simplest and still beautiful. You can use walnuts or any nuts, for that matter. You can also leave them clear. Bake for 9 minutes.

Notes

  • Honey Replacement – You can use several honey replacements in keto baking. Sukrin Gold is what I have used, but Yacon syrup is a great option. It is a very thick liquid dark in color and might slightly darken your cookies. 
  • No cookie-cutter – not a problem. You can roll your dough into a log and with a sharp knife cut circles. You can also use the top cover from one of the small mason jars as a round shape cutter. 
  • Sprinkles - if you are planning to decorate your cookies with our sprinkles, I suggest using them right when the cookies comes out of the oven. Sprinkle and let them cool to room temperature. If you bake your cookies together with sprinkles, the colors will slightly fade, as you see in my pictures how the cookies look.
  • Vegan gingerbread - swap butter for vegan butter and protein for plant based protein.
  • Crispier cookies - thinner your dough will be rolled into, the more crispy your gluten free cookies will become.
