  • 1 Cabbage Head
  • 1 Liter Water

Instructions

  • Start by removing any damaged or wilted outer leaves from the whole head. Rinse the cabbage under cold running water to remove any dirt or debris. Cut the cabbage into quarters, making sure to keep the core intact. This will help hold the leaves together during freezing.
  • Blanching is optional when freezing cabbage, but it can help preserve the color, flavor, and texture. Drop the cabbage wedges or quarters into a pot of boiling water for about 90 seconds to blanch. Then, quickly transfer them to a bowl of ice water to stop cooking.
  • After blanching, allow the cabbage to drain thoroughly. You want to remove excess moisture to prevent freezer burn.
  • Now, you can decide how you want to freeze shredded cabbage. You can freeze it in wedges, shredded, or as whole leaves for stuffed cabbage rolls. Cut it into the desired size.
  • Place the cabbage pieces on a baking sheet lined with parchment paper. Ensure they are in a single layer and not touching. Pop the baking sheet into the freezer. This process, known as "flash freezing," keeps the pieces from sticking together.
  • Once the cabbage is completely frozen, transfer the frozen cabbage to freezer bags or containers. Remove as much air as possible before sealing them tightly.

Notes

  • Keep the cabbage cold: If you have space in your fridge, place the cabbage in the refrigerator for a few hours before freezing. This helps the cabbage freeze faster and more efficiently.
  • Use it within a few months: While properly frozen cabbage can last long, it's best to use it within a few months for the best quality.
