  • Prepare all ingredients in advance to save you time making this recipe. You can make curd or farmers' cheese at home. If not, try to get the driest version possible. If not, add a tablespoon of protein or coconut flour to the batter to get a similar consistency you see in the video.
  • Start with mixing an egg and baking powder until smooth. You might see baking powder start working and giving you a foamy consistency. That is OK. Add sweetener and blend it in thoroughly. 
  • Once all is mixed, we start one by one, adding other dry ingredients and curd cheese. After you add each ingredient, mix it thoroughly. Here, you can use a hand mixer at a low speed if you wish. I could combine the whole cheesecake batter using a whisk and fork. 
  • Wet your hands, take a spoonful of batter and add the filling you choose into the middle. If you use chocolate mini chips, use a maximum of 3 or even one to make small balls. They do expand in the hot oil, and we want to avoid having big doughnut sized cheesecake bites. Here, you can start heating oil slowly. 
  • Cover the filling with batter and roll into a ball. Place individual cheesecake balls onto a tray ready for frying. 
  • Once your oil is hot, set it to medium temperature, or number 6. Six works best for me because the balls also have time to fry from the inside and will not burn quickly on the outside. Using a sharp knife, gently lift each ball from the board and place it into the oil. The baking powder still works and might soften the balls while on standby.  Fry the balls until brown and crispy, turning them regularly, making sure all sites get fried.

Notes

  • Graham Cracker Crumb - If you wish, you can roll the balls before frying in breadcrumbs or graham cracker crust for extra crunch
  • Cream Cheese - If you swap curd cheese for cream cheese, add more protein powder or coconut flour to thicken the batter. 
  • Frying - gently lift balls from the bard before frying. Baking powder still works and might soften the balls a bit.
