Instructions

  • Gather all ingredients, chop the spinach, crumble the goat cheese, and keep butter, salt, and pepper within reach.
  • Crack the eggs into a bowl, season with salt and pepper, and whisk until smooth and fully combined.
  • Melt butter in a non-stick skillet over medium heat, add the spinach, and cook briefly until just wilted.
  • Pour in the eggs and cook until mostly set, add goat cheese to one side, fold, and cook another minute until creamy and tender.

Notes

  • Use a non-stick pan or omelet pan to keep the eggs from sticking and to help shape a perfect omelet. Medium-high heat works best so the eggs cook evenly without turning rubbery.
