Ingredients

Instructions

  • Prepare all of the ingredients for making our keto biscuits. Regarding pork scratchings and lard, I have a perfect easy recipe you can pick and make your homemade pork scratchings.
  • Add all of the dry ingredients, almond flour, baking powder, and coconut flour into a big bowl. Using a whisk, mix all of the ingredients.
  • As next goes, all of the wet ingredients, which in this case is an egg, sour cream and lard which has been left at room temperature to soften. Mix once again, and using a spatula, make sure all of the ingredients are well combined, and you end up with a beautiful dough.
  • Place all dough onto a cling film and make one loaf to store in the fridge. Leave it in the fridge for 2 to 3 hours, even overnight.
  • The first thing is to heat your oven to 180 Celsius or 350 Fahrenheit. Take out the dough from the fridge and, using parchment paper as you see on the video, start rolling the dough. As you see, I have rolled it into a longer shape, which allowed me to spread the ground cracklings evenly. I have folded the dough in half and, using parchment paper, rolled it into a rectangular shape approximately 3 cm or less than an inch thick.
  • Using a cookie cutter or glass or a mason jar, let’s start cutting out your biscuits. Place them one by one on a parchment paper-lined baking sheet.
  • Once all biscuits are cut out, and on the baking tray, we can start designing them. I have used an egg slicer to make the design, as you see, but this is optional. I wanted those keto biscuits with pork cracklings looking precisely the same as we are used to making them in my country, Slovakia. Once the design is done you can brush the top of each biscuit with an egg yolk. Place in the oven and bake for 15 minutes.
