Ingredients

  • 2 Tablespoons Butter
  • 1 Onion
  • 2 Cups Mushrooms
  • 1 Cup Broth
  • 1/2 Cup Heavy Cream
  • Salt & Pepper
  • 1/4 teaspoon Xanthan Gum Optional

Instructions

  • First, prepare all the needed ingredients. Clean and chop the mushrooms to your desired size, and cut the onions into small pieces.
  • Prepare your cooking pot and saute the onions in the melted butter until caramelized. Add the mushrooms and cook until they release their moisture.
  • Once the onions and mushrooms are cooked, add the cream, bone broth, and salt and pepper. Bring the mixture to a boil, reduce to medium heat, and let it simmer for about 10 minutes. For an extra creamy texture, blend all using an immersion blender.
  • If the soup is not thick enough, sprinkle a bit of xanthan gum, stir well and cook for another minute or two.
