Ingredients

  • 2 Cups Apricots
  • 1/2 Cup Water
  • 1 Tablespoon Lemon juice
  • 1 Teaspoon Cinnamon
  • 1/2 teaspoon Xanthan Gum optional

Instructions

  • First of all, prepare all the ingredients needed for the recipe. Wash and pit the apricots. Cut them into small pieces and prepare the rest of the ingredients, such as water, lemon juice, and cinnamon. Since the xanthan gum is optional, it is your call whether to use it to thicken your jam at the end.
  • Combine the apricots, water, lemon juice, and cinnamon in your heated pot. Bring them to a boil over medium heat and cook for 20 minutes until the water evaporates, stirring frequently.
  • After the cooking time, stir the jam mixture and add 1/2 teaspoon of xanthan gum if you want it to have a thicker consistency. Continue to cook once you add the thickener.
  • Once you notice that the jam is getting thick, take the hand blender and blend the sauce until it turns into a smooth jam consistency. Remove the jam from the heat and allow it to cool before transferring it to your storage jars.
