Ingredients

  • Half a Chicken
  • 1 Onion
  • 2 Carrots
  • 3 Garlic Cloves
  • Half of a Leek
  • 1 Thick slice of Celery Root
  • Pinch of Parsley

Instructions

  • Prepare all the ingredients for the soup.
  • Add half a chicken, salt, and pepper into a big cooking pot. Cover it with cold water just so the chicken is submerged. Cook for a half-hour over medium heat. Once you see a tiny bit of fluffy foam on top called scum, you can discard that with either a sieve or a spoon.
  • In the meantime, you can clean all of your veggies and cut them so they do fit into the pot. Add all vegetables inside the soup and cook over medium heat for another 1 hour.

  • Using a strainer and cheesecloth, strain all soup into another pot to get the clear broth for you to use.
  • You can pour the clear chicken broth into the Mason Jar later on and leave only the amount you will use for serving.
  • Cut vegetables and cooked chicken into smaller pieces and place them into your serving plates. Pour over with boiling Broth.  
  • Here goes your choice of noodles. You can either use our Low-Carb Soup Noodles or pick one of the suggestions mentioned above in the article.

Notes

  • Vinegar - you can add a tablespoon of vinegar, which helps to take more nutrients out of the bones
  • Vegetables - types of vegetables are really up to you. But the best advice is to get whatever root vegetable you can get and have at home.
  • Cooking time - you can choose either to have a quick 1-1,5 hour process, where your chicken soup is ready, or 8-24 hours cooking time when you let your soup cook on a very low heat to enhance the flavor and get even more collagen from the bones of your bird. 
  • Scum - a foam that appears after cooking your chicken. As it may contain some toxins, it is advisable to discard that. 
  • Soup Noodles - I have not added the macros to the keto soup egg noodles as I am not sure which one you would choose, and it will be easier for you to calculate.
