  • Prepare all of the ingredients. At the same time, heat the oven to 170 Celsius or 350°f.
  • First, whip up your egg whites using a hand mixer or machine with a whisk attachment and beat on high speed until soft peaks form. Set aside.
  • Next, whisk egg yolks with a sweetener of your choice in a separate bowl until the mixture thickens and changes to light yellow.
  • Once your egg yolks are thoroughly whisked with sweetener, add whipped egg whites and gently fold them all. Switch your kitchen machine on medium and slowly add all other ingredients while whisking simultaneously. 
  • Cover your preferred sheet pan with parchment paper and pour the batter in. 
  • Add fresh berries to the batter and bake the cake for 30 minutes or until the toothpick inserted into the center of the cake comes out clean.
