Ingredients

  • Brussels sprout circa 30 pieces
  • 3 Eggs
  • 1 Cup Sour Cream
  • 200 grams Grated Cheese
  • Salt
  • Pepper

Instructions

  • Preheat oven to 200 Celsius or 390 Fahrenheit
  • Clean your brussels sprouts by cutting the end of the buts and peeling the outer layer of the leaves. Wash and place into the boiling pot of water for approximately five minutes and immediately place them into the iced water.
  • In the meantime, add eggs into a mixing bowl and whisk them properly. At the same time, add salt and pepper.
  • Once your eggs are whisked, continue adding sour cream and mix thoroughly
  • As the last ingredient, add your grated cheese and ensure the whole mixture is smooth.
  • Depending on the size of your casserole dish, spread the brussels sprouts evenly around.
  • Gently pour the mixture onto the brussels sprouts covering them all.
  • Place into the oven and bake for approximately 20 minutes.
  • After your Keto casserole has been baked, take it out of the oven. Spread the rest of the grated cheese on top.
  • Place again into the oven and bake for 10 minutes until the cheese becomes golden brown.

Notes

  • Blanching - for your brussels sprouts to retain beautiful green color, you have to blanch them before baking
  • Grated Cheese - make sure you grate your cheese at home as store-bought contains additional starches
  • Type of Cheese - any hard cheese such as Edam, Parmesan, Cheddar, Emmental works
  • Sour Cream - can be replaced with Heavy Cream
  • Additional spices - you can add onion powder or garlic powder for different flavors
