Ingredients

  • 2,2 Cups Minced Meat
  • 1 Tablespoon Dried Marjoram
  • Salt
  • Pepper
  • 2 Eggs
  • 2 Buffalo Mozzarella
  • 2 Whole Leeks

Instructions

  • Prepare all of the ingredients needed for our low-carb meatloaf recipe. In our case, it is minced meat, eggs, leeks, dried marjoram, salt, pepper, and, if needed, dry garlic. At the same time, heat the oven to 180 Celsius or 356 Fahrenheit
  • Clean and cut the lower white part of the leek (approximately 10 centimeters), chop it into small pieces, and add it to the bowl with minced meat. The rest of the leeks separate into single leaves as they would be used for packaging the meatloaf. 
  • Add eggs and herbs into the mixing bowl with minced meat and chopped leek. Combine all.  
  • Place a big pot with water to boil. Once boiling, add leaves from leek and cook for 3-4 minutes.  Remove the leak leaves from the water, pour cold water over them to set the color, and set them aside to dry a bit.
  • Start layering your meatloaf dish. Arrange the leek leaves on the bottom of the pan with the sides leaning over as described in the video. Once your sheets are layered, fill half of the pan with mixed meatloaf and add two mozzarella bowls into the middle. Cover it with the rest of the meat mixture. Finish up by covering the whole dish with the leek ends and, if needed, add more leaves, so the entire dish is covered.
  • Cover with aluminum foil, place it in the oven, and bake for 40 minutes. Once 40 minutes are done, take out the aluminum cover and bake for an additional 10 minutes.

Notes

  • Ice cold water - should be poured over the cooked leek to retain the beautiful green color
  • Aluminum Foil - cover the loaf pan before baking to retain the green color of the leeks
  • Flavors - add your preferred seasoning, ketchup, or mustard.
