  • Prepare your egg yolks, sweetener, heavy cream, milk of your choice, rum, Xanthan gum, and vanilla extract.
  • In a big bowl, place all raw egg yolks together with a sweetener.
  • Using either a hand whisk or hand mixer, whisk all the egg yolks together with sweetener until you get a beautiful creamy yellow egg mixture.
  • Start adding heavy cream once your egg yolks are whisked together with sweeteners. Keep whisking and adding cream until everything is combined. Next comes almond milk or a milk of your choice, which you just pour into the bowl and mix again.
  • Add a splash of vanilla rum and mix together. Adding xanthan gum is optional depending on whether you would like your eggnog thick.
  • Using a sieve, let the whole liquid run through it, making sure you catch all the lumps, which might sometimes appear while adding xanthan Gum.
