Different methods to Make Vanilla Extract.
To make Vanilla Extract you can choose 2 ways.
- Let it infuse in vodka or any other alcohol for at least 8 weeks, best 6-12 months. Shake once a week to make sure your infusion keeps working.
- Using Instant Pot in 45 minutes.
As you do know, that I own an Instant Pot and I believe most of you do too, I have decided to go the easy way.
I have planned this recipe for months and months.
As usual, some obstacles came in between.
First, I could not find Dark Brown Mason Jar, I wanted to make it in.
Later on, I did find some, but the bottles were so big, I could not fit them into the Instant Pot.

Then I wanted small bottles because I have decided since I am going to make a big batch, I might as well make some for my family and friends. And for that, I needed small bottles. And of course in dark brown glass. But that was not as easy.
Few months have gone, and I have collected it all and finally am able to share this super easy recipe with all of you on our blog.
Why make Homemade Vanilla Extract?
Having a Vanilla Essence you made at home is a big help.
First, you know exactly what you have placed in. So many store-bought bottles contain either a vanilla imitation mixed with additional artificial ingredients.
Second, the price is incomparable to the ready-made store-bought ones.
But let us first go directly to the steps on how to make this recipe and later on I will add all the possible questions and answers I could think of for you.

How to make Sugar-Free Vanilla Extract in an Instant Pot?

- Instant Pot
- Mason Jars
- Dark Brown Mason Jars for Storage
- Dark Brown Glass Jars for gifts – optional
Ingredients needed
- Vanilla Beans
- Vodka

STEP BY STEP INSTRUCTIONS ON HOW TO MAKE INSTANT POT VANILLA EXTRACT
First Step: Prepare Vanilla Beans
Cut each vanilla Bean first diagonally to make sure all the little beans inside are opened up. Once they are all cut, break each Vanilla Bean into half to fit into your mason jar.

Second Step: Fill Mason Jars
Depending on how many mason jars you’re going to use and how much vanilla extract you would like to have, split all the beans into Mason jars evenly.
I normally calculate for every mason jar – one cup of vodka and approximately three beans cut diagonally.

Third Step: Vodka
With regards to vodka or any other alcohol, you would like to use, make sure you get the best quality. This is very important since the vanilla essence or extract is going to be used for your baking and of course you would like to have the best quality possible. If you could manage, try and find at least 70% proof or stronger amounts of alcohol.

Fourth Step: Add Vodka
Once you have segregated all of the vanilla beans into the mason jars you’re going to use, add one cup of vodka into each. Do not fill up your mason jars fully with vodka, otherwise, the pressure in an instant pot, once it will start pressurizing, might break your glass. One cup for the jar is more than enough.
Close your jars fully. I’m speaking from my own experience as one of the Mason jars I have made the vanilla extract in, was not closed properly, the pressure in an Instant Pot filled the jar with liquid and therefore I could have thrown the whole content.

Fifth Step: Instant Pot
Prepare your Instant Pot by placing the metal stand in and fill it up with at least one cup of water.

Sixth Step: Fill
On the stand, place three of the mason jars fully closed and close the lid of an instant pot.

Seventh Step: Start your Instant Pot
Switch the instant pot on pressure for 45 minutes at the highest.
Some of the recipes call for 30 minutes, some recipes call for one hour or more. I have found out that 45 minutes is enough to give you the beautiful dark brown intensive extract you are looking for.

Eight Step: Collect
Once your 45 minutes is over let the pressure of an Instant Pot release slowly and wait for an extra 10 to 15 minutes. Open your Instant Pot gently and if you wish either let the jars in still or take them out but do not open.
You will see that the vodka will still be cooking for another half an hour or so.
Let the Mason Jar stop cooking and cool down a bit and only open then.

Tips and Tricks for Vanilla Extract making:
- Best Quality Vodka – try to get the best quality you can. In the end, you or your loved ones will eat everything you have added this Vanilla Extract to.
- 70% proof and more alcohol – To avoid Vanilla extract to go bad in a few months or years, pick the brand with the highest amount of alcohol.
- Close the jars fully – the pressure in an Instant Pot can fill the jar with liquid and therefore your extract will become bad
- Cooking Jars – use only the glass jar specially made for cooking. The pressure inside the Instant Pot together with alcohol is so high, that glass not designated for cooking will break.
- Brown bottles for storing – same as olive oil, to retain the best quality for a long time, use dark brown glasses to store your sugar-free vanilla essence.
- Once your vanilla essence is done and taken out of the instant pot, you can leave it inside the see-through mason jar together with vanilla beans for a few days for the infusion to continue. You can, later on, fill one dark brown jar with all the vanilla extracts without the beans, which you can use throughout the year. I normally take all the beans out and if needed I will add one or two fresh beans inside.

FREQUENTLY ASKED QUESTIONS AND ANSWERS
To make a vanilla extract in general, any type of vanilla beans works and would give you the perfect extract.
But if you insist, Grade A beans are the better quality as Grade B.
Also, Beans coming directly from Madagascar, Mexico or Tahiti are known as the best quality vanilla beans especially for vanilla extract.
Good Quality Pure Vodka without flavors.
You might also use Brandy, Rum or Bourbon, but Vodka has got the least flavor.
All of those Alcohols contain 0 carbs and are ok to use in Keto Lifestyle.
To make your vanilla extract in an Instant Pot, you have to choose only the canning quality jars. Any other jars will break at that pressure, especially when alcohol is included. My most popular brands are mason jars or Karr or any other Canning quality glasses you have around.
Making your vanilla extract directly in an Instant Pot without Mason Jars or any other jars is also a possibility, and that is something I have been thinking of before.
Why I have chosen to make them in the separate jars was for better handling, easier storage later on as well as faster clean up afterward.
But you can without a problem just pour vodka directly into the Instant Pot with beans and cook it in there.
All of my Vanilla Extract is stored in a big Dark brown Glass Mason Jar.
I usually use the small dark brown glass bottle I have on my Kitchen Counter at all times. Once that gets empty, I fill that up and add extra vodka into a big jar to store for later. This gives me a few months for the Vanilla Extract to work its magic. All you have to do is rotate.
You can use Food Grade Vegetable Glycerin, but I have not tried it in the Instant Pot.
It is possible in some cases that your vanilla extract might get bad after a few months.
Therefore, I insist on important points to watch out for.
Make sure your lid is fully closed.
Do not overfill the jar with vodka.
After a few days, take out the old vanilla beans to make sure you have a pure liquid only.
If made properly, the vanilla extract does not have an expiry date. They are supposed to be perfect for the rest of your life. All you have to do is refill with vodka or alcohol chosen and sometimes just add vanilla beans which are fresh to infuse the extract even more.
The best way to store your vanilla extract is in the glass jar at a room temperature. The best is in your cupboard or pantry directly. I normally store all of my vanilla extracts in a big dark brown glass mason jar and only take an amount I will use for the next few months into a smaller dark brown glass jar.

- 9 Vanilla Beans

Yes, the Pressure will work on any size bottles you have. Just make sure you do not fill vodka into a full Jar as the pressure might break the glass.

I made this today, and was transferring to the dark brown jars, it smells odd, not like vanilla, and still smells of vodka, slightly. Did I do something wrong? Or will the scent come in a few days?

The scent will intensifies as it settles. What I do, is add 1 or 2 new vanilla sticks, cut lengthwise in half into the big bottle once every 3 to 6 month. I also add more vodka if needed. This ways I will never run out of my vanilla extract.

Could this be done with a Mini duo Instapot? I can fit one 16 oz Mason jar in the middle or 3 10 oz jars inside. Have you had anyone try this or do you have any suggestions? Know the measurements would have to be adjusted.
