  • Prepare all the ingredients needed. Start by ensuring your high-quality almonds are dry. If they have any moisture, it can affect the chocolate coating later. Spread them out on a baking sheet and let them fully air dry.
  • Prepare your Instant Pot and melt the dark chocolate in a medium bowl with coconut oil. You can use a double boiler or microwave to melt the chocolates. Stir in between until completely melted and smooth using a stick or spoon.
  • Once the chocolate is silky and completely melted, pour the almonds into the chocolate bowl. Ensure each almond is generously covered with the chocolate to avoid uneven coating. Use a stick or spoon to dip the whole almonds in. After ensuring they are coated, use a sieve to get all the almonds and prevent waste of the excess chocolates. If you do not have a small sieve, you can use a fork to get the almonds individually.
  • Place the chocolate coated almonds in a tray with parchment paper using long tweezers or any dipping tool. Make sure to place each almond one at a time and make spaces from each piece to prevent the chocolates from sticking. And for the perfect flavor contrast, sprinkle a little sea salt over the almonds while the chocolate is still wet. It is only optional, you can leave yours unsalted if you want. Dry for at least 30 seconds before chilling it in the refrigerator.
