Activated Almonds In Melted Chocolate

Coating your activated almonds in chocolate is the same as your regular almonds. However, soaked almonds taste better than the normal ones. If you do not know, activated almonds are almonds that have been soaked in water and then dehydrated. It is a process that enhances their nutritional value and makes them easier to digest.

The activated almonds are better than the normal ones as they are soft and chewy in the mouth. What more if they are covered in chocolate? You should try it sometime.

Chocolates To Use For Coating Almonds

The best chocolate for your almonds depends on your taste preferences. Whether you enjoy the deep richness of dark chocolate or the sweetness of milk chocolate, choose the one that suits your taste palate. You can make dark chocolate using excess chocolate or cocoa in your fridge.

Dark Chocolate

Dark chocolate offers a deep, intense cocoa flavor with potential fruity or floral notes, depending on the origin of the beans.

Milk Chocolate

Milk chocolate is sweeter and creamier than dark chocolate, thanks to adding milk solids. It has a milder cocoa flavor.

White Chocolate

White chocolate has a sweet, vanilla-like flavor because it has no cocoa solids. It is the sweetest of the three main chocolate types.

Chocolate Magic Shell

Chocolate magic shell is a recipe I made for many uses, especially for dessert recipes on my blog, such as ice cream popspopsicles, and berries. It is called a magic shell because it magically hardens once used in any frozen dessert. It could also be an option for coating your almonds.

Get your ingredients ready, and let us dive into making the chocolate-covered almonds. Follow these steps to make the snack that will be gone in seconds. Make your almonds more exciting to eat using chocolate for a bittersweet experience.

If you prefer visual instructions for making this recipe, no need to worry because I have also prepared a video for you with the whole recipe process.

Kitchen Gadgets Needed:

  • Instant Pot: Use it to melt chocolate with precision.
  • Stick or Spoon: Ideal for stirring and coating almonds in chocolate.
  • Long Tweezers or Thongs: Perfect for handling individual almonds.
  • Glass Bowl: Suitable for melting chocolate and easy dipping.

Ingredients Needed:

  • Almonds: These wholesome nuts bring a delightful crunch to your chocolate-covered almonds. Packed with nutrients, almonds provide a satisfying texture and a nutty flavor that pairs perfectly with the sweetness of chocolate.
  • Sugar-Free Dark Chocolate: Sugar-free dark chocolate ensures a lower-carb option without compromising taste.
  • Coconut Oil: Adding coconut oil to the chocolate serves a dual purpose. Firstly, it helps achieve a smooth and glossy consistency in the melted chocolate, making the coating process easier. Secondly, it brings a subtle hint of coconut flavor, enhancing the overall taste.
  • Sea Salt (optional): A pinch of sea salt can uplift the flavor profile for those who love the contrast of sweet and salty. The saltiness cuts through the richness of the chocolate, providing an irresistible balance that enhances the overall enjoyment of your chocolate-covered almonds.

STEP-BY-STEP INSTRUCTIONS FOR DARK CHOCOLATE COVERED ALMONDS

First Step: Prepare Ingredients

Prepare all the ingredients needed.

Start by ensuring your high-quality almonds are dry. If they have any moisture, it can affect the chocolate coating later. Spread them out on a baking sheet and let them fully air dry.

For the chocolate, if you are using a chocolate bar, slice it into small pieces to melt quickly. You can also use dark chocolate chips if you prefer. As for the optional sea salt, you can use a flaky sea salt like mine.

Second Step: Melt Chocolate

Prepare your Instant Pot and melt the dark chocolate in a medium bowl with coconut oil. You can use a double boiler or microwave to melt the chocolates. Stir in between until completely melted and smooth using a stick or spoon.

Third Step: Dip The Almonds

Once the chocolate is silky and completely melted, pour the almonds into the chocolate bowl. Ensure each almond is generously covered with the chocolate to avoid uneven coating. Use a stick or spoon to dip the whole almonds in.

After ensuring they are coated, use a sieve to get all the almonds and prevent waste of the excess chocolates. If you do not have a small sieve, you can use a fork to get the almonds individually.

Fourth Step: Spread On A Tray

Place the chocolate coated almonds in a tray with parchment paper using long tweezers or any dipping tool. Make sure to place each almond one at a time and make spaces from each piece to prevent the chocolates from sticking. And for the perfect flavor contrast, sprinkle a little sea salt over the almonds while the chocolate is still wet. It is only optional, you can leave yours unsalted if you want.

Dry for at least 30 seconds before chilling it in the refrigerator.

TIPS AND TRICKS:

  • Parchment paper – line your tray with parchment paper before spreading the chocolate-covered almonds. This not only prevents sticking but also prevents any mess to clean up.
  • Sea salt – if you want a perfect sweet-and-savory balance, sprinkle a pinch of sea salt over the almonds while the chocolate is still wet. It would enhance the flavor, and you’d like it better.
  • Experiment with flavors – try different varieties of almonds, or experiment with flavored chocolates like mint or orange-infused dark chocolate. You might discover a new favorite combination.

  1. I made these chocolate coated almonds using orange-infused dark chocolate. The flavors were amazing and very luxurious. There’s sweetness, citrus, and salty. Amazing flavors I want in my snacks.
