Instructions

  • As a first step, prepare all of the ingredients for the chia pudding and coffee topping. 
  • Add the Chia seeds into a magic bullet or food processor and grind.
  • Once your chia seeds are blended into a powder, add a nut milk to the same container and sugar sweetener. Close the lid and remix it. 
  • Pour into the glasses in which you plan to serve your pudding and store in the refrigerator until you are done with topping. 
  • Place instant coffee, sugar sweetener, and boiling water in equal parts into the food processor and start mixing it. It will take approximately 3 to 4 minutes until the foam begins forming.

Notes

  • Grind Chia Seeds – the best way to grind your seeds is in a food processor or Magic Bullet. You can blend your chia seeds in advance, and store them in a glass container in the refrigerator. 
  • White or regular Chia Seeds – It does not matter which ones you will use. The taste will be the same. The only difference is that with white chia seeds, you get that lighter, milkier look to the whole pudding.
  • Dalgona Topping – the best is to whip up dalgona coffee foam right when serving. You can keep the chia pudding prepared in the fridge for a day or two and add dalgona only once you are ready to serve. 
  • Instant coffee – I have tried 3 different varieties of instant coffee and realized crema gives you the lightest and least bitter taste. 
  • The pudding is too thick - add more milk.
