Keto dalgona coffee is the next craze I have fallen in love with after the chaffle time.
What Is Dalgona?
The actual name Dalgona comes from Korean candy called the same name. Dalgona sponge candy is a candy you can make with sugar and baking soda, and the look is the same as if you put Dalgona foam on top of your coffee.
Why Is It Called Dalgona?
Dalgona’s coffee name came after South Korean actor Jung II-woo went to the streets of Macau and ordered a delicious fluffy coffee in one of the street coffee shops.
It reminded him so much of the Korean sponge candy, also called dalgona, that he named it after it and later made a video of the steps to make it himself.
Whisking Dalgona Coffee
There are various ways you can make the foam.
I have chosen the easiest, mixing it in the kitchen machine, which is the fastest and least labor needed.
You can use a hand whisk, which will take a very long time, and it’s tough, but you can achieve beautiful foam as well.
You can also use the small hand milk frother, which my daughter uses when she makes dalgona coffee for my husband. A slightly different type of foam, but everyone likes something else.
My daughter loves, for example, the dalgona foam from the kitchen machine, but my husband prefers the one made with the hand milk frother.
What Is the Best Sugar Sweetener for Low Carb Dalgona Coffee?
As you see in the pictures, I have tried various sugar sweeteners for the keto dalgona coffee topping and have realized the following:
Pure Erythritol will whip up the foam but does not hold very long. It just flattened very fast. The same happened with using the monk fruit mixture together with Erythritol.
The best and longest-lasting foam for keto dalgona coffee are Sukrin gold, Allulose, and Xylitol ( make sure it is not derived from corn as those types upset your tummy). All three give you excellent results, and the dalgona coffee topping stays beautiful for a long time.
What Are the Nutritions of This Delicious Keto Pudding?
The carb count of this perfect keto friendly pudding is impressive. One whole serving of chia pudding, a whole cup as you see in the pictures, comes to 3 grams of carbohydrates and 11 grams of fiber.
With 7 grams of protein and 192 grams of calories, this perfect keto breakfast idea will fill you up for a long time.
Carbs in Chia Seeds
Two tablespoons of chia seeds have 12 grams of carbohydrates but 10 grams of fiber. The fiber in chia seeds is precisely the ingredient we seek.

To make any chia pudding using one of the nut milk, the ratio usually is three tablespoons of chia seeds to one cup of liquid.

STEP-BY-STEP INSTRUCTIONS FOR EASY KETO FRIENDLY DALGONA COFFEE PUDDING
First Step: Prepare All Ingredients
As a first step, prepare all of the ingredients for the chia pudding and coffee topping.
For pudding, you will need the following:
- Chia seeds white or dark (it does not matter)
- Nut Milk of your choice. I have used, in this case, a mixture of coconut and unsweetened almond milk.
- Sweetener of your choice.
For the coffee topping, you will need all the equal parts:
- Instant coffee
- Sugar sweetener, again, the choice is yours.
- Boiling water
- The boiling water could be added just at the last minute.
Second Step: Grind Chia Seeds
Add the Chia seeds into a magic bullet or food processor and grind.
You can also use chia powder if you have one available.
I usually grind my chia seeds in advance and keep them in the refrigerator in a glass container or mason jar.
Whenever needed, I take a tablespoon or two and use it.
Third Step: Add Milk and Sugar Sweetener and Mix
Once your chia seeds are blended into a powder, add a nut milk to the same container and sugar sweetener. Close the lid and remix it.
Thats it.
Fourth Step: Pour into the Glass
Pour into the glasses in which you plan to serve your pudding and store in the refrigerator until you are done with topping.
Fifth Step: Prepare Dalgona Coffee Topping
Now it is time to make a dalgona coffee topping.
Place instant coffee, sugar sweetener, and boiling water in equal parts into the food processor and start mixing it. It will take approximately 3 to 4 minutes until the foam begins forming. You can also whisk the dalgona topping with your hand or milk frother.
Tips and Tricks To Make Chia Pudding:
- Grind Chia Seeds – the best way to grind your seeds is in a food processor or Magic Bullet. You can blend your chia seeds in advance, and store them in a glass container in the refrigerator.
- White or regular Chia Seeds – It does not matter which ones you will use. The taste will be the same. The only difference is that with white chia seeds, you get that lighter, milkier look to the whole pudding.
- Dalgona Topping – the best is to whip up dalgona coffee foam right when serving. You can keep the chia pudding prepared in the fridge for a day or two and add dalgona only once you are ready to serve.
- Instant coffee – I have tried 3 different varieties of instant coffee and realized crema gives you the lightest and least bitter taste.
- The pudding is too thick – add more milk.

How Long Does Keto Dalgona Coffee Stay Fluffy?
Dalgona coffee fluff is supposed to stay for a very long time if using regular sugar. I have not tried it myself with normal sugar, but I have seen on the Internet people keep it in the refrigerator or store the foam in the freezer.
Can I Use Chocolate Keto Chia Pudding or Overnight Keto Chia Pudding?
You can use any pudding to make this recipe. It will be perfect if the pudding is keto or low carbs and contains some milk, even canned coconut milk or a cup of heavy cream.
Be it chocolate pudding, overnight chia pudding, made with unsweetened cocoa powder, vanilla extract, or even not chia.
Add almond butter or coconut cream for extra fat. Milk is essential to keep the whole dalgona experience almost real.
Regarding chia puddings, I usually make a whole batch for a week, mix it and store it in the fridge. I take a portion from the refrigerator and make dalgona foam whenever needed.
The foam should be done before serving because if left for longer, it will flatten and not be as fluffy as when mixed immediately.
