Keto Dalgona Coffee is the next craze I have fallen in love with after the Chaffle time.

Our Yogurt Keto Chaffles are so good, that until now nobody got fed up with them. 

And I do believe Dalgona Coffee will be the next one on the list of unforgettable Keto Delicacy.

And since Dalgona Coffee recipes are all over the Internet I’ve decided I’m not going to make another one of them, but something different. 

My second decision of making something different as Dalgona coffee is the milk. 

I just cannot drink coffee with milk and just thinking about making Dalgona Coffee recipes I do not like, doesn’t fit with my blog. All of the recipes I prepare need to be liked first of all by me and then by my family.

So I started Brainstorming.

I have considered various ideas. 

First I wanted to make Panna cotta.

Then I have realized summer is coming, so I should maybe do popsicles or an Ice Cream that would be even easier. 

Or even easier than having it on top of our Keto Eggnog drink (which was another tip I thought of) but it’s not Christmas and it’s not Easter either.

I came up with an idea of a pudding.

There is nothing more delicious as whipping up a pudding. 

And since all of my recipes are really really easy to make, what better idea than using chia seeds for the pudding.

White Chia Seeds

I have chosen white Chia Seeds, simply because of the look. I just wanted to get as close to the Milk looking Dalgona Crave. 

You can use normal Chia seeds if you do not have white ones right now.

Keto Chia Seed Chocolate Pudding is another great idea if you are in love with Chia Seeds.

Chia Powder

Grinding Chia Seeds into a powder is not only beneficial for the smoothness of your pudding.

Of course, the pudding also looks a bit more smooth, but grinding chia seeds help you acquire beneficial omega-3 fatty acid. Similar to flax seeds, you may want to grind them prior to using them in a recipe whenever possible.

Eggs or Oil Substitute

Ground Chia Seeds are also great Egg or Oil Substitutes. Just use 1 part chia seeds and 9 parts of water.  Let it sit for a white and you have it. 

What is the best Sugar Sweetener for Dalgona Coffee?

As you see on the pictures, I have tried various sugar sweeteners for Keto Dalgona coffee Topping and have realised the following:

Using pure Erythritol will whip up the foam, but does not hold very long. The same happened with using the Monk fruit mixture together with Erythritol.  It just flattened very fast. 

The best and longest-lasting foam for Keto Dalgona Coffee for my opinion are Sukrin Gold, Allulose as well as Xylitol ( make sure it is not derived from corn as those types make your tummy upset). All three of them give you excellent results and the Dalgona Coffee topping stays beautiful for a long time. 

What is Dalgona?

The actual name Dalgona comes from Korean candy called the same name. Dalgona sponge candy is a candy you can make with sugar and baking soda and the look is exactly the same as if you put Dalgona foam on top of your coffee.

What is Dalgona Coffee?

Dalgona Coffee is a trend which started in January of this year when one of the Korean Actor discovered this coffee after ordering it on one of the streets in Macau. 

Why is it called Dalgona?

Dalgona Coffee is called Dalgona, after South Korean actor Jung II-woo went to the streets of Macau and ordered a coffee in one of the street coffee shops. 

It reminded him so much of the Korean Sponge Candy called also Dalgona, that he named it after it and later on made the video of the steps on how to make it on his own.

Who started Dalgona Coffee Trend?

Dalgona Coffee – this super popular trend, started with South Korean actor Jung II-woo, who made a video on his channel on how to make this super delicious coffee. He had experienced this fluffy coffee on the streets of Macau, he visited. It reminded him so much of Korena popular Sponge Candy Dalgona, that he named this coffee after it. 

But I have to honestly say that I’m not sure if this Dalgona Coffee mixture is something brand new. 

I do remember when I used to work for Nad Al Sheeba Club in Dubai, we used to make our morning coffee in a very similar way. 

Because I did not like milk, I normally used instant coffee with sugar and a few drops of hot water.

I’ve been mixing this with a teaspoon until a froth forms. This makes the perfect form on top of the coffee which I loved and enjoyed every single morning in the office. Fill the rest of the cup with remaining boiling water and there you have it. The best coffee ever.

I think it is time to start making the recipe.

How to make the best Keto Dalgona Chia Pudding 

Kitchen Gadgets you might need

  • Magic Bullet or blender
  • Kitchen machine or hand whisk or hand Mix Frother

STEP BY STEP INSTRUCTIONS FOR KETO DALGONA CHIA SEED PUDDING

First Step: Prepare All Ingredients

As a first step, prepare all of the ingredients both for the Chia pudding as well as Dalgona coffee Topping. 

For pudding, you will need: 

  • Chia seeds white or dark (it does not matter)
  • Nut Milk of your choice. I have used in this case a mixture of coconut and almond milk.
  • Sweetener of your choice. 

For Keto Dalgona coffee Topping you will need all at the equal parts:

  • Instant coffee 
  • Sugar sweetener again the choice is yours 
  • Boiling water

The boiling water could be added just at the last minute.

Second Step: Grind Chia Seeds

Grind your Chia seeds in either a magic bullet or your food processor. 

You can also use Chia powder if you have one available. 

I normally grind my Chia seeds in advance and keep them in the refrigerator in a glass container or Mason Jar.

Third Step: Add Milk and Sugar Sweetener and Mix

Once your Chia seeds are grind into a powder, add nut milk into the same container and sugar sweetener. Close the lid and mix it again. 

Finish – it is that easy.

Fourth Step: Pour into the Glass

Pour into the glasses you are planning to serve your pudding in and store in the refrigerator until you are done with Dalgona Topping.

Fifth Step:  Prepare Dalgona Coffee Topping

Now it is time to make Keto Dalgona Coffee topping. 

Place instant coffee, sugar sweetener, and boiling water all in the same equal parts into the food processor and start mixing it. It will take a while approximately 3 to 4 minutes until the froth starts forming. You can also whisk the Dalgona topping with your hand whisk or Hand milk frother.

Tips and Tricks:

Grind Chia Seeds – the best way to grind your Chia seeds is in a food processor or Magic Bullet. You can grind your chia seeds in advance, but store them in a glass container in the refrigerator. 

White or normal Chia Seeds – It does not really matter which ones you will use. The taste will be the same. The only difference is, that with white Chia seeds you get that lighter milkier look to the whole Dalgona Coffee Chia Seeds Pudding.

Dalgona topping – the best is to whip up Keto Dalgona Coffee foam right at the time of serving. You can keep the chia pudding prepared in the fridge for a day or two and add Dalgona only once you are ready to serve. 

Instant Coffee – I have tried 3 different varieties of Instant Coffee and realized Crema gives you the lightest as well as the least bitter taste. 

Whisking Dalgona coffee could be done in various ways. 

I have chosen the easiest, mixing it in the kitchen machine which is the fastest and least labor needed. 

You can use a hand whisk, which will take you a very long time and it’s really really difficult but you can achieve the beautiful foam as well. You can also use the small hand milk frother which my daughter uses when she makes Dalgona coffee for my husband. You do get a little bit different type of foam, but everyone likes something else. My daughter loves, for example, the Dalgona foam from the kitchen machine, but my husband prefers the one made with the Hand Milk Frother.

What makes Dalgona Coffee Foam?

You can hand whip Dalgona coffee without a problem but it will take you a very very long time and hard labor. 
You have to really keep mixing it fast and for a long time for the foam to start forming. 
You can also use a hand milk frother which will give you slightly different results but everyone likes something else. 
My daughter likes the Keto Dalgona Coffee topping directly from the kitchen machine, as the froth is much lighter. 
My husband on the other side loves the Dalgona Coffee froth from the hand milk frother. 

So it is really up to you which way you choose and which way you prefer.

How do you make Dalgona Coffee less bitter?

How long does Keto Dalgona Coffee stay fluffy?

Dalgona coffee fluff is supposed to stay for a very long time if using normal sugar. I have not tried it myself with normal sugar, but have seen on the Internet people keeping it in the refrigerator or storing the foam in the freezer.

I have tried various sugar sweeteners for Keto Dalgona coffee Topping and have realized the following:
