  • To make the cake, prepare all ingredients together. You can make farmers' cheese and yogurt at home, and sweetener can be ground into powder form using a coffee grinder. At the same time heat oven to 150 degrees Celsius or 300 degrees Fahrenheit.
  • In your kitchen machine, mix egg whites until fluffy and stiff.
  • Swap the bowl and add egg yolks with sugar sweetener for mixing. Keep mixing until you get a fluffy light yellow consistency.
  • Once you thoroughly mix the egg yolks, add additional ingredients. Switch on the kitchen machine and keep mixing until all the farmer's cheese is fully incorporated.
  • Slowly fold all of the egg whites in. After adding egg whites and mixing, fold in the blueberries dried, fresh or frozen.
  • Once you have mixed all, take your silicone form and pour the cake batter into it. Bake the cake in the oven for 60 minutes or until a toothpick inserted into the cake comes out clean. Once you take the cake from the oven, invert the cake onto the wire rack and allow the cake to cool.

Notes

  • Cover – I suggest covering the cake pan for the last 15 minutes of baking with aluminum foil to prevent the whole cake from burning on the top and not being fully baked in the middle.
  • Cake Form – I have used silicone baking form for this cake, just because that is what we love, and that is what I use most of the time.
  • Blueberry Pound Cake - If you have a simple pound cake form or a bread loaf form, you can certainly use those as well.
  • Yogurt – adding yogurt depends on how dry your farmer's cheese is. If it is not very dry, you can skip yogurt entirely.
