Farmers Cheese

Farmers Cheese, Curd Cheese, Topfen in German, or Tvaroh in Slovak, has been one of the major ingredients for baking and cooking since I was a child. Moving to Austria and having at least 10 different varieties of Farmers Cheese in every single shop, did not make me reduce, but increase on baking with this wonderful Low Carb ingredient.

It always has its special place in our Pantry – well refrigerator. 

Just add a bit of sweetener to a bowl of Farmers Cheese or some Berries and you have a great Keto Breakfast whipped up in seconds.

I sometimes make my Homemade Farmers Cheese, which is unbelievably tasty once fresh, but when I bake in bigger quantities, I just buy. 

Use Farmers Cheese in our Keto Farmers Bread. I also add it to Cheesecakes instead of Cream cheese.

I would say it is as popular here in Central Europe, as is Cream Cheese in the US.

We normally make Cheesecakes with Farmers Cheese instead of Cream Cheese.

Farmers Cheese Keto Bundt Cake idea came during our unwilling 2-month stay at home, where we only had groceries delivered once a week and had to live with what we have.

And as our No-Bake Ripple Chocolate Cheesecake came live with having just an enormous amount of yogurt, next came the idea of this Keto Farmers Cheese Bundt Cake. 

Just having too much of a Farmer’s cheese in the refrigerator and my family refusing to have it on a daily basis, I had to do something.

As soon as I baked this super quick and easy and Yummy Farmers Cheese Keto Bundt Cake, half of it was gone in no time.

What baking forms can you use for Keto Cakes?

I have used Bundt Cake silicone form for this cake, just because that is what we love and that is what I use most of the time.
But if you do have a simple Pound Cake baking form or just a bread loaf form, you can certainly use those as well.
The most important is, to use silicone if possible.

I have had quite a lot of bad experiences with baking keto desserts in different forms and they got either fully stuck, burnt, or had an extreme difficulty to take the Keto Cakes out.
With silicone forms, especially in Keto baking, everything goes smooth and you get a perfect shape cake without issues every single time.

Can you make your own Farmers Cheese?

You can certainly make your own Farmers Cheese and it is so easy. 
You can have a look at our post where I have made a Homemade Farmers Cheese in a few easy steps.

Farmers or Curd cheese is perfect to use not only for your breakfast just mixed with a few berries, but you can also use it in all of the baking instead of cream cheese. It will add a different texture and flavor to your cakes.

Can you use Cream Cheese for the Bundt Cake?

You can certainly use cream cheese for this batter, but it will not be as dense looking in a good way and crumbly as it looks on the images. You might get something like a keto Cream Cheese Bundt Cake. A bit different recipe, but still sounds fabulous. 

If you would like to use cream cheese for this recipe I would suggest avoiding the yogurt since the cream cheese consistency is a bit different.

How To Make Farmers Cheese Keto Bundt Cake?

Kitchen Gadgets you might need:

  • Silicone Bundt Cake Baking Form
  • Kitchen Maschine
  • Silicone Spatula

Ingredients Needed:

  • Farmers Cheese
  • Yogurt
  • Eggs
  • Sugar Sweetener

STEP BY STEP INSTRUCTIONS FOR FARMERS CHEESE KETO BUNDT CAKE

First Step: Egg Whites

In your kitchen machine mix egg whites until fluffy and stiff.

Once mixed, place it on the side for later use.

Second Step: Egg Yolks & Sugar

If you have two bowls for your kitchen machine, swap the bowl and add egg yolks together with sugar sweetener for mixing.

Keep mixing until you get a fluffy light yellow consistency.

Third Step: Farmers Cheese

Once the egg yolks are fully mixed, you can start adding additional ingredients. 

I have also added 4 tablespoons of yogurt which will soften the Farmers cheese a bit. As you can see I have used the farmer’s cheese which is completely crumbly and dry.

Switch on the kitchen machine and keep mixing until all the Farmers cheese is fully incorporated in.

As you see on the video I have also added a pinkish powder which is not really required. It is my homemade dehydrated yogurt together with wild blueberries which I believed would color the Farmers cheese Keto Bundt Cake, but this did not happen and I have not seen any changes in adding it or not adding this ingredient in.

Fourth Step: Egg Whites and Berries

Once the farmer’s cheese is completely incorporated into the mixture take your bowl with egg whites and slowly fold all of the egg whites in. It is best to fold them manually to get the cake a little bit fluffy. 

What I usually do is I add half of the egg whites into my  Kitchen machine and mix it in.

The rest of the egg whites will be then added and hand-folded slowly by me with a spatula.

After all of the egg whites are incorporated you can add either half a cup of fresh blueberries or as in my case quarter cup of dried blueberries. This is also optional but I believe blueberries add a little bit of fruity touch into this Keto Bundt Cake.

Fifth Step: Baking Form & Bake

Once all is mixed, take your silicone form and pour the batter into it.

Bake it in the oven.

Tips and tricks:

Cover – I would suggest covering the Bundt Cake for the last 15 minutes of baking with aluminum foil to prevent the whole cake from burning on the top and not being fully baked in the middle.

Cake Form – I have used Bundt Cake silicone form for this cake, just because that is what we love and that is what I use most of the time.

But if you do have a simple Pound Cake form or just a bread loaf form, you can certainly use those as well.

Yogurt – adding yogurt depends on how dry your Farmers cheese is. If it is not very dry, you can skip yogurt entirely.

How can you store Keto Farmers Cheese Bundt Cake?

This Keto Farmers Cheese Pound Cake can be stored in the refrigerator for up to 4 to 5 days. If longer, I would suggest freezing it in an airtight container or packed in an aluminum foil.

Can you freeze this Farmers Keto Bundt Cake?

You can certainly freeze this Farmers Keto Bundt cake. I normally suggest cutting the cakes into separate pieces and freezing them as a single serving but for this cake to keep it as a whole is a much better idea. 

You can either store it in an airtight container or covered with an aluminum foil and place it into the freezer directly.

Once you would like to consume the cake take it out of the freezer the night before and let it thaw naturally.

    1. Heat up the oven to 150C or 300F
    2. In your kitchen machine mix egg whites until fluffy and stiff. Once mixed, place it on the side for later use.

My farmer’s cheese bundt cake (made in a loaf Pan) is not cakes at all. It’s thick/dense and kind of wet. I didn’t add yogurt as it seemed to have enough moisture. With no flour or baking soda I don’t understand how you got that cake like product?
