Instructions

  • Prepare all of the ingredients together. It is always easier to assemble everything once all is ready to mix. Make sure all is at room temperature. At the same time, preheat oven to 350°f or 180 Degrees Celsius.
  • Scoop out half a cup of Nutella or hazelnut spread into a large bowl.
  • Add all of the other ingredients.
  • Mix all of the ingredients with sugar-free Nutella using a spatula, ensuring you blend everything.
  • Once thoroughly mixed, prepare your cookie sheet by lining it with parchment paper or a silicone baking mat. Using two teaspoons or a small ice cream scoop, place the cookies on the baking sheet, leaving space between them.  You can finish shaping the cookies and flatten them with your wet hands. If you prefer, flattening keto Nutella cookies gives them a bit of crunchiness.
  • Bake for 10 minutes in the oven and let them cool completely on a cooling rack. In addition, you can add a sprinkle of sea salt on top. Enjoy delicious baked cookies straight, or store them for later.

Notes

  • Scooping: You can use two teaspoons, as in our video or a small ice cream scoop.
  • Flatten: You can flatten your cookies by hand to get that slightly crunchy taste.
  • Size: As you see in the video, we like mini-size cookies in our house. If you prefer much bigger cookies, add longer baking time.
  • Cooling time: Let the cookies fully cool to harden.
