Ingredients you will need

  • Nutella: Even though real Nutella Is a big no-no in our lifestyle, we call most of the other hazelnut spreads similar to the taste of Nutella, either sugar-free or keto. Below, I have mentioned some quick steps on how to make your own sugar-free Nutella at home. If you want to experiment with other homemade or store-bought sugar-free Nutella, go ahead. This recipe should work with all. 
  • Eggs: Eggs play a crucial role in binding and providing structure to these almond flour Nutella cookies, contributing to their delightful chewiness and soft texture.
  • Baking Powder and Almond Flour: I have decided to add some baking powder (or baking soda) to lift them in the oven during the baking process. Also, adding a bit of almond flour will give them a bit of crunchiness, so they are somewhat soft to the bite. 
  • Vanilla Extract: When I made our vanilla extract in the Instant Pot, I added it to every sweet recipe. I feel vanilla adds an extra touch with a bit of sweetness to sweet dishes. You can add it in, but you can also skip this ingredient. It is up to you what you prefer. 

Sweetener: I have decided not to add any of the sugar replacement. I believe Nutella – any type or brand, is extra sweet on its own. Making cookies out of it does not need to add any additional sweetness.

Shapes and Baking

As our video shows, we always prefer to make mini cookies. We love bite-size cookies, and that is what I make all the time. 

If you prefer to make larger cookies, you can do so without problems. I suggest adding a few more minutes while baking.

  • Mixing bowl
  • Teaspoons
  • Baking Tray 
  • Parchment Paper

Ingredients needed:

  • Sugar-Free Nutella
  • Egg
  • Almond Flour
  • Baking Powder
  • Vanilla Extract – Optional

STEP-BY-STEP INSTRUCTIONS ON THE BEST NUTELLA CHOCOLATE COOKIES

First Step: Prepare Ingredients

Prepare all of the ingredients together. It is always easier to assemble everything once all is ready to mix. Make sure all is at room temperature.

At the same time, preheat oven to 350°f or 180 Degrees Celsius.

Second Step: Add Nutella Into a Bowl

Scoop out half a cup of Nutella or hazelnut spread into a large bowl.

Third Step: Add Other ingredients

Add all of the other ingredients.

Fourth Step: Mix

Mix all of the ingredients with sugar-free Nutella using a spatula, ensuring you blend everything.

Fifth Step: Scoop and Shape

Once thoroughly mixed, prepare your cookie sheet by lining it with parchment paper or a silicone baking mat.

Using two teaspoons or a small ice cream scoop, place the cookies on the baking sheet, leaving space between them. 

You can finish shaping the cookies and flatten them with your wet hands. If you prefer, flattening keto Nutella cookies gives them a bit of crunchiness.

Sixth Step: Bake

Bake for 10 minutes in the oven and let them cool completely on a cooling rack. 

In addition, you can add a sprinkle of sea salt on top.
