Ingredients

  • 2 Cups Cauliflower Rice half of medium cauliflower
  • 2 Tablespoons Butter
  • 3 Garlic Cloves
  • 1/4 Cup Cream Cheese
  • 1/2 Cup Shredded Cheese

Instructions

  • Prepare all of the ingredients for easy assembly. Press your garlic cloves and shred the cheddar cheese. If you do not have your fresh riced cauliflower, I quickly explain the easy process of how to make it below in the next step. But if you are interested, I have a whole post and the recipe for making cauliflower rice in seconds with more details. 
  • Clean and cut your head of cauliflower into smaller florets. Place them into the blender or food processor and cover them with cold water. Switch your blender to medium and see how a cauliflower turns into rice within seconds.  You have perfect cauliflower rice to use for your meals. Let it run through a sieve, and there you go. This is a great tip, especially when you have a lot of cauliflower in your kitchen. 
  • Add the cauliflower rice to the pan and add little salt and pepper. Continue to cook the cauliflower for 3 to 4 minutes. Cauliflower rice does not need to be cooked for long. Depending on your preferred texture, 3 to 8 minutes is all you need. 
  • Once your cauli rice is almost cooked, add cream cheese and mix it all. Cook for a few minutes. Add shredded cheddar cheese and mix it. Top up with freshly chopped herbs and serve immediately or let it cool for storage.

Notes

  • Cheddar - Always shred your cheese. Store-bought shredded cheese contains starches, which are not needed and will raise your carbohydrates. 
  • Rice - Make your rice in seconds following our steps and have it always ready.
  • Frozen cauliflower rice - Frozen riced cauliflower can be used as well. You might have to cook the cauliflower longer for the moisture to evaporate. I have used frozen cauliflower rice for another perfect recipe.
  • Seasoning - Add your favorite seasoning for extra flavors.
  • Cheese sauce - Add heavy cream if you prefer a more saucy texture.
