Easy Keto Cauliflower Recipes

As you have seen me expanding on various cauliflower recipes, I need to mention a few. You are at the end here because you are interested in one of them. Broccoli works the same as cauliflower, incase of interest.

Cauliflower is a great vegetable to make keto rice with because of its similar texture, look, and even taste when appropriately made. 

But did you know you can make perfect sushi using cauli rice? And it tastes even better than ordinary sushi does. Trust me. 

On the other hand, coconut riced cauliflower is a great side dish for Asian or Indian dishes. Frozen cauli baked to the perfect crunchiness will be your top side dish for sure. 

And then comes our favorite mashed caulitoes. Great to take your child’s memory lane. 

How Many Calories Are In Cheesy Cauliflower Rice?

Because of the amount of cheese and cream cheese involved in this recipe, our calories are slightly higher. But it is all worth it after tasting the first spoon. And on top of that, this side dish will fill you up for hours. 

1 Cup of this cheesy wonder gives you 282 grams of calories.

How Many Net Carbs Per Serving is in Cheddar Cauliflower Rice?

Choosing the right ingredients, especially in our lifestyle, is very important. As carbs are one of the most critical factors, I always make sure it’s low in carbs in the first place. 

Our cheesy rice contains only 2 grams of net carbs per serving, a whole one cup.

  • Cooked bacon bits
  • Chopped scallions
  • Shredded cheddar cheese
  • Diced tomatoes
  • Fresh herbs like parsley or cilantro

How to make Cheesy Cauliflower Recipe

Here go the full instructions on how quick and easy to make this cheesy rice. I have also made a video for those who prefer visual instructions. 

Kitchen gadgets needed:

  • Blender for making rice
  • Cooking Pot

Ingredients needed:

  • Fresh cauliflower
  • Butter
  • Garlic
  • Cream Cheese
  • Cheddar Cheese
  • Salt and pepper

STEP-BY-STEP INSTRUCTIONS FOR AN EASY CHEESY CAULIFLOWER RICE RECIPE

First Step: Prepare Ingredients

Prepare all of the ingredients for easy assembly. 

Press your garlic cloves and shred the cheddar cheese. 

If you do not have your fresh riced cauliflower, I quickly explain the easy process of how to make it below in the next step. But if you are interested, I have a whole post and the recipe for making cauliflower rice in seconds with more details.

Second Step: Make Cauliflower Rice

Clean and cut your head of cauliflower into smaller florets.

Place them into the blender or food processor and cover them with cold water.

Switch your blender to medium and see how a cauliflower turns into rice within seconds. 

You have perfect cauliflower rice to use for your meals. Let it run through a sieve, and there you go. This is a great tip, especially when you have a lot of cauliflower in your kitchen.

Third Step: Butter and garlic

In a pan, heat butter and add crushed garlic. Let it cook for a minute until the garlic gets slightly brown.

Fourth Step: Cook rice

Add the cauliflower rice to the pan and add little salt and pepper. Continue to cook the cauliflower for 3 to 4 minutes. Cauliflower rice does not need to be cooked for long. Depending on your preferred texture, 3 to 8 minutes is all you need.

Fifth Step: Add cheese and serve

Once your cauli rice is almost cooked, add cream cheese and mix it all. Cook for a few minutes. Add shredded cheddar cheese and mix it. 

Top up with freshly chopped herbs and serve immediately or let it cool for storage.

TIPS AND TRICKS:

  • Cheddar – Always shred your cheese. Store-bought shredded cheese contains starches, which are not needed and will raise your carbohydrates. 
  • Rice – Make your rice in seconds following our steps and have it always ready.
  • Frozen cauliflower rice – Frozen riced cauliflower can be used as well. You might have to cook the cauliflower longer for the moisture to evaporate. I have used frozen cauliflower rice for another perfect recipe.
  • Seasoning – Add your favorite seasoning for extra flavors.
  • Cheese sauce – Add heavy cream if you prefer a more saucy texture.

Yes. This is a perfect base for making your keto cauliflower mac and cheese. Add fiber noodlesegg noodles, or fettuccini, mix them, and place them into the casserole. Bake until crusty, and serve this comfort food as usual. 

How Do I Store Low Carb Cauliflower Keto Meal?

Place in a glass container. Cover the lid and store the container in the refrigerator for 3 to 4 days. 

Can I Freeze Cheesy Keto Cauliflower?

Yes, it is possible to freeze our low carb cheesy riced cauliflower. Simply place it into the freezable container and freeze it until ready to use. 
When you plan to enjoy this dish, take it out of the freezer the night before and let it thaw naturally. You can microwave or warm up in a skillet over medium heat.
