  • First things first, prepare all your ingredients. Pick any peanuts of your choice. I am using unsalted recipes for this recipe, but you can also use salted or roasted peanuts. For the chocolate, use a dark chocolate bar and chop it into small pieces to melt easily. You can also use dark chocolate chips or white chocolate chips. Choose whatever chocolate you want to use.
  • Using the instant pot switched on sautè, add water in and let it boil. Add your chocolate and melt the dark chocolate pieces in a heatproof bowl. Add the coconut oil and stir until thoroughly combined and until the chocolate is melted and smooth.
  • Pour the peanuts into the chocolate and mix with a spoon or baking spatula to coat them evenly. Another way of coating them is to pour the chocolate on top of them, but this can be a bit messy.
  • Prepare a baking sheet with wax or parchment paper and transfer the chocolate peanuts one by one to cool. You can use a spoon or a long tweezer to transfer each peanut, making sure they do not stick to each other. Let the chocolate-covered peanuts chill in the refrigerator or freezer to enjoy later.
