Prepare all of your ingredients. Cut the chicken into small cubes or pieces, and chop your vegetables, such as carrots, zucchini, and leeks, into sliced pieces. Make sure to wash the vegetables first.
Heat your pot and add butter. Add the chopped onions and garlic once the butter has melted. Once they are caramelized, add the chicken and stir them all together in the pan, cooking on low heat.
Slowly add the carrots, zucchini, and leeks when the chicken is cooked. Mix and add the broth. Cover with a lid and let it simmer until the vegetables, especially the carrots, are cooked.
After simmering the vegetables, you can add the Xanthan gum by dissolving it in hot water or from the hot broth in the pot. Mix it in and pour it into the soup. Continue by adding the heavy cream. Mix again until the cream combines with the broth and has a creamy soup texture. Lastly, add the dumplings into the simmering soup, cover, and let it simmer again for 10 minutes to cook the dumplings.
