I love this chicken and dumplings recipe because it’s the ultimate comfort food without the carbs. The tender chicken, fluffy dumplings, and rich, savory broth bring all the cozy flavors you want in a dish. Plus, the ingredients are simple, budget-friendly, and likely already in your kitchen, making it a go-to meal that’s as flavorful as it is easy to make.

Serve it with your favorite crisp salad, such as green goddess salad with a vegan green goddess dressing, for a balanced meal. You can also pair it with bacon-wrapped Brussels sprouts to make it more enjoyable to eat.

Soup recipes are the ones that always win, and one of them is chicken noodle soup. You can check more, like egg drop soup, sauerkraut soup, roasted pumpkin soup, and creamy tomato soup

Traditional Chicken and Dumplings

The traditional way of making dumplings and chicken involves making the broth during the actual cooking process, which means it comes fresh from the chicken, herbs, and vegetables.

Another difference is how they remove and shred the chicken after cooking it. In that way, you will separate it from the broth. You will have to cook it again, but this time, you will add the chicken first, then the broth, and lastly, the dumplings. 

Almond Flour Keto Dumplings

I have prepared a separate recipe for the dumplings used in this recipe. I used almond flour and coconut flour as the base of the dough.

I have made a steamed dumpling recipe before, but I did it in the form of a bread loaf, unlike the new one, a small dough ball designed for this chicken and dumplings recipe.

How To Make Keto Chicken And Dumplings Recipe

Let’s start making this keto chicken and dumplings recipe. This is one of the best chicken recipes I have ever made, and you can achieve the same with this step-by-step process I prepared for you.

Kitchen Gadgets Needed:

  • Cooking Pot: Prepare a large pot to hold all the ingredients and fit your cooking amount. 
  • Mason Jar: Use it for the ingredients, especially the liquid ones like broth and heavy cream.
  • Small Glass Containers: These small containers will help organize all the ingredients needed for easy preparation.

Chicken and Dumplings Ingredients:

  • Butter: Use butter instead of any oil for sauteing because it gives additional creaminess to the dish once it is cooked.
  • Onion: Any type of onion will do either red or white onions. It adds great flavor when it is sauteed together with the chicken.
  • Garlic: Like onions, minced garlic adds flavor that impacts the overall flavor of the finished dish.
  • Chicken: Choose boneless and skinless chicken thighs for juicy and tender bites. You can also substitute chicken breasts, shredded chicken, or rotisserie chicken.
  • Carrots: Look for the freshest carrot at the market. This ingredient will add sweetness and color to the dish.
  • Zucchini: Add chopped zucchini as an additional veggie as it provides extra nutrition and flavor.
  • Leek: Used for the aroma of the dish. It has a mild onion-like flavor so it will also add taste.
  • Broth: You can use homemade bone broth or chicken broth as long as it is gluten free.
  • Heavy Cream: This gives this dish a creamy finish. 
  • Xanthan Gum: Instead of using flour or cornstarch with carbs, use Xanthan gum as the thickening agent. Just a tiny amount will do the work.

STEP-BY-STEP INSTRUCTIONS FOR MAKING LOW CARB CHICKEN AND DUMPLINGS RECIPE

First Step: Prepare Ingredients

Prepare all of your ingredients.

Cut the chicken into small cubes or pieces, and chop your vegetables, such as carrots, zucchini, and leeks, into sliced pieces. Make sure to wash the vegetables first.

Second Step: Saute

Heat your pot and add butter. Add the chopped onions and garlic once the butter has melted.

Once they are caramelized, add the chicken and stir them all together in the pan, cooking on low heat.

Third Step: Vegetables

Slowly add the carrots, zucchini, and leeks when the chicken is cooked.

Mix and add the broth. Cover with a lid and let it simmer until the vegetables, especially the carrots, are cooked.

Fourth Step: Add the Rest of The Ingredients

After simmering the vegetables, you can add the Xanthan gum by dissolving it in hot water or from the hot broth in the pot. Mix it in and pour it into the soup.

Continue by adding the heavy cream. Mix again until the cream combines with the broth and has a creamy soup texture.

Lastly, add the dumplings into the simmering soup, cover, and let it simmer again for 10 minutes to cook the dumplings.

TIPS AND TRICKS:

  • Dumplings: It is better to drop the dumplings raw so they absorb the soup better than when they are already cooked or steamed.
  • Vegetables: You can add more or choose any vegetable you like.
  • Heavy cream: Use heavy cream or coconut milk.
  • Broth: Make homemade broths and store them in your freezer to have it always available.

Can I Use Cooked Chicken Instead Of Chicken Breasts and Chicken Thighs?

Yes, you can use cooked chicken, but I suggest still sauteing it with onion and garlic for the best taste and texture. Using cooked chicken is also great for busy people who want to save time and simplify the preparation process.

What to Serve with Easy Keto Chicken and Dumplings?

One of the best ways to serve your savory chicken soup with dumplings is by pairing it with cauliflower rice. I have a few cauli rice recipes here such as frozen cauliflower rice, cheesy cauliflower rice, mashed cauliflower rice, and coconut rice cauliflower. Choose from one of them and tell me which one you enjoyed it most.

It is also perfect to pair with bread bites and low-carb biscuits, as you can dip them into the savory and creamy soup.

How Do I Store Low-Carb Chicken And Dumplings?

Transfer your dish to an airtight container and place it in the fridge for a few days. I use the freezing method when I have a massive batch of leftovers.
