  • Sauté butter and garlic until lightly golden, add cauliflower rice with salt and pepper, cook 3 to 4 minutes, then stir in cream cheese and cheddar until melted.
  • Add broth and blend until smooth, then mix in xanthan gum if needed to thicken.

Notes

  • Hard Cheese - Shred-it at home to avoid additional starches. I prefer cheddar, which gives you that smooth sharp taste, perfect for mimicking mashed potatoes, but parmesan cheese also works excellently. 
  • Xanthan gum is unnecessary if you are happy with the consistency after blending.
