Prepare all the ingredients. Try to select unsalted or lightly salted peanuts to have better control over the saltiness of the clusters. This allows you to balance the sweetness of the chocolate coating. Set aside your peanuts and start chopping the chocolate into small pieces if you are using a bar. That way, it will be easier to melt them for the coating. You can use any chocolate you like.
Add water into your instant pot and switch to saute. Once the water starts cooking, place a glass bowl in it. Add the chocolate with coconut oil and melt it all together. Stir with a stick until well combined, melted and smooth.
Once the chocolate is melted, gently fold in the peanuts, ensuring they are evenly coated with the dark chocolate. You can stir it with a stick to combine them correctly for an even coating.
Prepare your mini cupcake liners or parchment-lined baking sheets and scoop the peanut mixture. Drop small clusters onto the cupcake liners using a spoon or a cookie scoop, forming bite-sized portions. Place the tray in the refrigerator until the clusters firm up, about 2 hours. Melting chocolate methods - You can use a double boiler and the microwave method to melt the chocolate if you do not have an instant pot.
