  • Prepare all of your ingredients.
  • Pour heavy cream with one tablespoon of powdered sweetener into the glass container. Using your Hand Blender, whisk until stiff peak and place aside.
  • In another glass container whisk egg whites until soft peak
  • And a third glass jar with egg yolks and the rest of the powdered sugar. Whisk this super yummy combination until fluffy.
  • Using your spatula, gently combine all of the 3 deliciousness into one triple delicious mixture.
  • Fill whatever mold you have chosen for those lovely homemade Sugar-Free Mini Popsicles.
  • Gently bang your filled molds against the kitchen counter few times. This helps all extra bubbles inside to pop and you will get even out mini popsicles.
  • Add Ice Pop sticks and a bit of extra mixture on top to cover them. Bang once again and straight into the freezer.

Notes

  • Powdered Sweetener – If you only have crystalized sweetener, quickly grind it in your blender, coffee grainer, or Magic Bullet. 
  • Dairy free version - For dairy-free, use coconut cream or canned coconut milk instead. Make sure you get full-fat coconut milk for the thickness. 
  • Bang against your kitchen counter – because the mixture is extra fluffy and contains many airy bubbles, I suggest gently banging your filled molds against the kitchen counter a few times. This helps all extra bubbles inside to pop, and you will get even-out mini popsicles. 
  • Chocolate Coating – as an addition, you can still dip those frozen beauties into sugar-free chocolate magic shells.
