Instructions

  • Preheat the oven to 200 Celsius or 390 Fahrenheit. Prepare all of the ingredients for making the best keto bread pudding.
  • Add your eggs, heavy cream, cinnamon, brown sugar substitute, and vanilla extract in a bowl.
  • Using a whisk, mix all of the ingredients until you get a perfect egg mixture to use later on.
  • Once you have your brioche toast ready, slice it into thicker pieces and cut into small cubes. Depending on what casserole size you’re using, fill up the casserole and make sure there are enough bread pieces covering the casserole up to the top.
  • Once all of your bread pieces are spread inside the casserole. Take the egg mixture and pour it all over the bread.
  • Once everything is mixed together, top up your casserole with pieces of butter.
  • You can also sprinkle some extra brown sugar and cinnamon on top of your casserole. Bake for 30 - 40 minutes until golden brown.

  • Heavy cream - can be replaced with unsweetened Almond Milk or any milk alternatives.
  • Soak Overnight - you can choose to let the casserole soak overnight to get the best result and have a perfect overnight french toast casserole.
  • Bread type - whatever bread recipe you choose, it is best to use bread slices that are already a few days old as they best soak the mixture.
