  • With your choice of sugar substitute, whisk 2 cups of heavy cream until stiff peaks. 
  • Add glycerin to make it churn-free while freezing.
  • Add xanthan to the low-carb ice creams to make the texture much creamier.
  • Add half the coconut milk to the whipping cream and slowly mix it. Once mixed, add the rest of the milk and mix until all of the ingredients are combined.
  • You can pour the mix straight into your machine or a Cuisinart ice cream maker and let it run as instructed.
  • Serve this best ice cream right away and enjoy.

  • Cream - You can replace heavy whipping cream or part of the milk with half of the coconut cream to make the ice cream more coconuty.
